Chinese Homemade Winter Melon Soup

I would like to make this Popular Chinese Winter Melon Soup with dried scallops and mushrooms during Chinese New Year dinner I am giving. You can also add or change few ingredients to your preferences from the following recipe :)Winter melon is this huge, light green, waxy outer skin and white, soft inner flesh melon that is available all year round and not only in winter. Chinese believes it is cooling to the body. It can be slow boil in sweet dessert or make as savoury soup. Winter melon is a good source of Vitamin B1, B2 and vitamin C, rich in beta carotene, calcium and so on. Helps clear the heat and toxin, promotes urination, reduce water retention, expels phlegm, stop cough, improves metabolism, reduce fats and etc.
Ingredients (3 servings)Well, for ingredients, you shall prepare for 2 chicken drumstick, 1 bulb of garlic, 200g winter melon (skinned, seeded and cut into chunks), 8 red dates 红枣 , 1 tablespoon of wolfberries 枸杞, salt and pepper to taste, 2 bowl of water. You can get red dates and wolfberries in any Chinese Grocery. The Making Firstly, boil the chicken in a pot filled with boiling water for 15 minutes. Remove the chicken from pot and set aside. Drained water away. After that, put in all ingredients including the chicken into a pot, pour in 2 bowls of water and bring to boil over high heat. Reduce heat and simmer for 30 minutes. Season with salt and pepper to taste. Serve hot.
