White Bean Soup Recipe (Yummy...! Yummy....!)

This is a delicious White-Bean Soup Recipe with ham and sausage soup that a friend gave to me. It is very easy and the great thing about it is that you can add additional ingredients, more ham, potatoes, etc and it still turns out great. Ingredients (4 servings)To prepare 2 tablespoons of butter, 1/3 cup of celery (diced), 1/3 cup of carrot (peeled & diced), 1/3 cup of onion (peeled and diced), 1 teaspoon of minced garlic, 1 can of white beans (you can use navy or kidney beans too), 1/2 teaspoon of dried thyme, 1/2 teaspoon of pepper, 2 cups of water and 8 ounces of smoked sausage or ham (diced). The Making Heat a saucepan over medium heat, melt butter. Saute celery, onion, garlic for 5 minutes until tender. Add all remaining ingredients, cover the lid, bring to boil. Reduce heat and simmer for 15 minutes. Transfer 1/2 cup of soup into a blender, puree until smooth. Return to pan, simmer for another 5 minutes. Serve hot.
