Vegetarian Split Pea Soup

Hope you enjoy the soup, and for those of you who have never tried Vegetarian Split-Pea Soup, this might be the time to give them a go! It's a delicious, healthy, textured soup made from an impossibly short list of ingredients.Ingredients (4 servings)2 cups of split peas, 2 bay leaves, 8 cups of water, 2 carrot (peeled and diced), 3 celery stalk (diced), 1 onion (diced), 2 potatoes (diced), 1/2 cup of fresh flat leaf parsley (chopped) and seasoning : pepper and salt to taste. The Making 1). Using kettle to boil water. 2). Saute celery, onion, carrot with seasoning. Add in water and peas, cook for 15 min. 3). Add in potatoes, bay leaves & simmer for another 20-30 min. Adjust seasoning to desired taste. Stir constantly. 4). Cook until pea are soft and tender, discard bay leaves and add fresh herbs. You can garnish with yogurt or sour cream (optional) before serve. Yummy!
