I am a Vegetarian-Soup Lover. Try out these soup. They are very easy to make and filling.
Homemade Orzo Vegetarian Soup Absolutely delicious!

Ingredients To prepare 1 red onion, 1 carrot, 1 small red capsicum, 1 celery stalk, 1 zucchini, 1 tomato, fresh peas, salt and fresh ground white pepper, 1 handful of orzo. The Making Wash and chopped finely all the vegetables. Heat olive oil & butter in a saucepan over medium heat. Saute carrot, onion, celery and red capsicum until soft. Add in zucchini and cook until soft. After that, add in tomato and cook until tomatoes are start to break down. Add in orzo and enough boiling water / vegetable stock. Boil the soup for 5 minutes and stir constantly. Add in pea and season with salt and white pepper to taste.
Pasta Vegetarian Soup Excellent filling soup!

Ingredients 2 tablespoon of olive oil, 1 onion (peeled and chopped), 1 garlic clove (crushed), 1 red pepper (chopped), 1 litre of vegetable stock, 400 g tin chopped tomatoes, 2 large carrots (peeled and chopped), 125 g cauliflower, 2 medium potatoes (peeled and cubed), 75 g small pasta shapes, 125 g frozen peas, Salt and freshly ground black pepper to taste. The Making Heat olive oil in a saucepan over medium heat. Saute onion, garlic and red pepper for about 5 minutes. Add in all remaining vegetables except peas. Cook for about 3 minutes. Pour in vegetable stock. Bring to boil and reduce heat, simmer for about 20 minutes. Add n pasta shapes and peas and cook for another 10 minutes. Season with salt and pepper to taste. Serve hot.
Red Lentil Vegetarian Soup It is warming and quite delicious for any raining day.
Ingredients 1 Cup of Red Lentils (washed and drained), 2 Cups Water or Vegetable Stock, 1 big pat of butter, 1 Onion (peeled and chopped), 5 cloves of chopped garlic, 1 large chopped green chili, 2 tsp of cumin, 1 handful of chopped Cilantro, 1 chopped tomato, 1/2 can of coconut milk, seasoning : salt and pepper to taste. The Making Prepare a dutch oven, place in lentil and pour in stock or water. Bring to boil. Reduce heat. Simmer for about 15 minutes until lentils are soft. Prepare a pan, melt butter and saute onion until soft. Add in garlic, chili, cumin and cook for another 5 minutes. Merge the spice/onion mix and the lentils. Add the chopped tomato and simmer for 5 more minutes longer. Ass seasoning to taste. Stir in coconut milk. Garnish with cilantro and serve with lime wedges, rice or Indian bread.
Cabbage Vegetarian Soup This hearty soup is a little bit sour and you will like it :)

Ingredients 1 small head green cabbage (shredded), 1 medium onion (peeled & chopped), 2 medium carrots (peeled and chopped), 1 (15 oz.) can fire roasted tomatoes (chopped), 3 cloves minced garlic, 6 cups vegetable broth, 1 teaspoon dried basil, 2 teaspoon of dried parsley, 1 teaspoon dried oregano, 1 teaspoon ground coriander, 1/2 teaspoon of dried rosemary, 1/2 teaspoon of dried thyme, 1/2 teaspoon of dill seed, 1/2 teaspoon of dried red pepper flakes, 1 (15 oz.) can chickpeas (drained and rinsed), 1/2 cup oats (I used 5 minute oats), 1 tablespoon red wine or cider vinegarsalt and pepper to taste. The Making Prepare a soup pot, place in cabbage, onion, carrots, tomatoes, garlic, herbs and broth. Bring to boil. Reduce heat and simmer for about 10 minutes. Add in chickpeas, oats, vinegar, salt and pepper. Cover the lid and simmer for about 5 minutes. Serve hot.
