White Bean Vegetarian Soup Recipes This soup consist of chili oil, white bean....something special and nice. Easy to make.

Ingredients Well, for ingredients, you shall prepare for 500g dried butter beans (soaked in cold water for overnight, drained), 2 tablespoons of vegetable oil, 1 medium size of onion (peeled and chopped), 1 garlic clove (chopped), 2 carrots (peeled and chopped), 2 celery sticks (chopped), 1.4 litre of hot vegetable stock, 2 bay leaves, 2-3 sprigs fresh thyme and chili oil (for drizzling). The Making Heat oil in a saucepan, saute onion and garlic for few minutes until soft. Add in carrot and celery, cook for about 3 minutes. Add in beans, stock, thyme, bay leaves and some pepper, cover the lid and bring to boil. Reduce heat and simmer for about 20 minutes. Discard bay leaf and thyme. Transfer soup into a blender, puree until smooth. Return to pan, add seasoning to taste. Heat through gently. Serve with a drizzle of chili oil and a sprinkling of thyme leaves.
Split Pea Soup Vegetarian Soup Recipes This fantastic soup drizzled with olive oil, topped with lemon zest & paprika. G-r-e-a-t!

Ingredients Well, you shall prepare for 3 cups of dry green split peas (rinsed and drained), 3 medium sized yellow onions (peeled and chopped), 3 tbsp of extra virgin olive oil, 7.5 cups of water, 1 vegetarian bouillon cube (about 10g), 1 lemon (quartered), salt to taste. For garnishing : extra virgin olive oil and some paprika. The Making Heat olive oil in saucepan, saute onion for few minutes until soft. Pour in water and add in bouillon cube and split peas. Bring to boil. Reduce heat and simmer for 1 hour until split peas start to break up. Squeeze lemon juice into soup. Season with salt to taste. Serve with a little olive oil drizzled on the top of the soup and a dusting of paprika. Top with a nice big pinch of lemon zest, and serve hot.
Pasta & Tofu Vegetarian Soup Recipes You can make some minor modification by adding your preferred vegetables, eg. broccoli, corn kernel, spinach.... .you can also encourage to use your preferred noodles besides of pasta..dare to change! Don't worry, the soup will be great too! :)

Ingredients 5 cups of water, 2 celery stalks (sliced), 3 medium mushrooms (chopped), 3 cloves garlic (sliced finely), 1 medium onion (peeled and diced), 1 large carrot (peeled and cut in round), 1 package firm tofu (cubed), 1 package vegan “chicken” cutlets (chunk), 1 teaspoon of thyme, pinch of ground cumin, 2 teaspoons of Italian seasoning, 2 cubes vegetable bullion, 2 bay leaves, 1 tablespoon of sea salt, 2 handfuls of pasta, 7 tablespoons of nutritional yeast or 2 cups of “No-Chicken” broth, 1/2 teaspoon of black pepper (or to taste) The Making Firstly, fry the tofu cubes in olive oil until slightly browned. Place tofu, 1 cup of water, salt, 3 tablespoons of dissolved yeast flakes or 1 cup of "No chicken" broth in a bowl. Marinade the tofu for about 3 hours. Heat the remaining water with the remaining “No Chicken” broth or yeast flakes, until simmering. Add in onions, spice and carrot, continuing to simmer. Add in the marinated tofu into the soup. Simmer for about half an hour. Add remaining veggies & pasta. Simmer until all veggies are tender & pasta are cooked. Discard bay leaves. Add seasoning to taste. Serve hot.
