Vegetarian Soup Recipe - Best Chili Soup I LOVED this recipe! I did find however that I had to almost double the amount of chili powder and cumin.

Ingredients 1 tbsp of olive oil, 1/2 medium onion (peeled and chopped), 2 bay leaves, 1 tsp of ground cumin, 2 tbsp of dried oregano, 1 tbsp of salt, 2 stalks celery (chopped), 2 green bell peppers (chopped), 2 jalapeno peppers (chopped), 3 cloves garlic (chopped), 2 cans of chopped green chile peppers (4 ounce)- drained, 2 packages vegetarian burger crumbles (12 oz), 3 cans whole peeled tomatoes (crushed)(28 ounce), 1 can whole kernel corn (15 oz), 1/4 cup of chili powder, 1 can kidney beans, drained (15 oz), 1 can garbanzo beans, drained (15 oz), 1 can black beans (15 oz), 1 tbsp of ground black pepper . The Making Prepare a large pot, heat olive oil. Saute onion for about 2 minutes and season with bay leaves, cumin, oregano and salt. Add in celery, green bell pepper, jalapeno pepper, garlic and green chile pepper. Cook for few minutes. Add in vegetarian burger crumbles. Reduce heat and simmer for about 5 minutes. Add in tomatoes. Season with chili powder and pepper. Stir in kidney beans, garbanzo beans and black beans. Bring to boil. Reduce heat and simmer for about 45 minutes. Add n corn and cook for another 5 minutes.
Vegetarian Soup Recipe - Lentil Soup A soup with a lot of vegetables. Fantastic!

Ingredients Well, you shall prepare for 1 onions (peeled and chopped), 1/4 cups of olive oil, 2 carrots (peeled and diced), 2 stalks celery (chopped), 2 cloves garlic (minced), 1 tsp of dried oregano, 1 bay leaf, 1 tsp of dried basil, 1 can of crushed tomatoes (14.5 ounces), 2 cups of dry lentils, 8 cups of water, 1/2 cup of spinach (rinsed and thinly sliced), 2 tbsp of vinegar, pepper & salt to taste. The Making Firstly, prepare a soup pot, heat oil over medium heat. Saute onions, carrots, and celery for about 5 minutes until soft. Add in garlic, bay leaf, oregano, basil and cook for another 2 minutes. Add in lentil, water and tomatoes.Bring to boil. Reduce heat and simmer for about 1 hour. Add in spinach and cook until wilted. Season with vinegar, salt and pepper to taste. If desired, you can add in more vinegar.
Vegetarian Soup Recipe - Black Bean & Salsa Soup I also added a little sherry to this recipe. Yummy!

Ingredients (4 servings)To prepare 2 cans of black beans (about 15 oz) (drained and rinsed), 1.5 cups of vegetable broth, 1 cup of chunky salsa, 1 tsp of ground cumin, 4 tbsp of sour cream and 2 tbsp id thinly sliced scallions. The Making Prepare a food processor or blender, add in beans, salsa & cumin. Blend until smooth. Prepare a saucepan, add in the bean mixture and heat over medium heat for 15 minutes. Top with sour cream and green onions before serve.
Vegetarian Soup Recipe - Southwestern Tomato Soup A low fat soup.

Ingredients To prepare 2 cans of kidney beans (about 16 oz - rinsed and drained), 1 can of tomato paste (15 oz), 1 can of vegetable broth (14.5 oz), 1 can of diced tomatoes with chilies (undrained - about 14.5 oz), 1 can of corn (11 oz -drained), 1 cup od chunky salsa, shredded cheddar cheese (please ignore this ingredient if you are a vegan), tortilla chips. The Making Prepare a saucepan, add in beans, tomato sauce, vegetable broth, tomatoes, corn and salsa. Bring to boil and stirring constantly. Reduce heat and simmer for about 10 minutes. Topping with cheese and tortilla chips before serve.
Vegetarian Soup Recipe - Miso Soup A delicious Japanese Soup. Quick and Easy.

Ingredients Well, you shall prepare for 4 cups of water, 1/3 cup of miso, 3 green onions (chopped), 1 tablespoon of shredded nori or wakame (seaweed), 1/2 block of firm silken tofu (cut into 1 inch cubes), 1 dash of soy sauce (optional item), 1/2 teaspoon of sesame oil (optional item). The Making Prepare a soup pot, pour in water and add in seaweed, bring to simmer over medium heat for about 6 minutes. Reduce heat to very low, add in the remaining ingredients. Stir well until miso dissolved completely. Do not boil. Garnish with scallion before serve. You can add in your preferred vegetables, eg. carrots, cabbage, mushrooms etc.
