Hearty Vegetarian Black Bean Soup

This Hearty Vegetarian Black-Bean Soup was taught by my beloved Grandma. This soup is not only nutritious & healthy, it is very tasty. I love to cook this soup to my families & they love it very much too :)Black Beans are a wonderful source of dietary fiber which has been shown to naturally help lower cholesterol. In addition, the high fiber content in Black Beans helps keep blood sugar levels from rising too rapidly after a meal, making them a wise choice for people with diabetes, insulin resistance or hypoglycemia.
Ingredients 1 can of sliced tomatoes (undrained), 1 cup of onion (peeled and sliced), 1/2 teaspoon of ground cumin, 2 green onions (sliced), 1 cup of potatoes (peeled and sliced), 2 can of black beans (about 15 ounces - rinsed and drained), 1 can of vegetable broth (15 ounces), 2 garlic cloves (minced), 1/2 teaspoon of dried thyme and 1/2 teaspoon of hot pepper sauce. The Making Prepare a saucepan, add in onions, garlic, 1/4 cup of broth, bring to boil. Reduce heat and simmer for 8 minutes until onions are soft and tender. Add in beans, cumin, potato, thyme, remaining broth, continuous boiling. Reduce heat and simmer for about 25 minutes until potatoes are tender. Add in tomatoes, hot pepper sauce and heat through gently. Garnish with green onions before serve.
