I have variety of easy & quick making, healthy and delicious vegetable-soups to share with you. Let's grab your preferred vegetables soups from the following:


Beef and Vegetable Soup

Ingredients

(Servings : 5)

1 pound of Beef stew meat (cut into 2cm pieces), 5 cups of Water, 3 Carrots (peeled and sliced), 3 Celery stalks (sliced), 2 Potatoes (sliced), 2 Large onions (sliced), 1/4 head of Cabbage (sliced), 3 tablespoons of Margarine. Seasoning : 1 1/2  teaspoon Salt  & 1/2 teaspoon of black pepper

The Making

Prepare a soup pot, melt butter over medium heat. Brown beefs. Add in all vegetables (except cabbage) and water. Reduce heat, cover the lid and simmer for about 45 minutes until all vegetables are tender. Add in extra water if desired. Add in cabbage including seasoning to taste. Simmer for another 20 minutes. Serve.


Chinese Style Vegetable-Soup

Ingredients

(Servings : 6)

Soup stock (chicken or beef) - 6 cups
Onion, chopped finely - 1
Carrot, peeled and shredded - 1
Mushrooms, sliced - 3/4 cups
Clove garlic, minced - 3
Celery, diced - 1 cup
Ginger - 1 teaspoon
Snow peas, chopped - 0.5 cup
Spinach, shredded - 1/4 cup
Waterchestnuts, chopped - 0.5 cup
Cooked brown rice - 1 cup
Bamboo shoots, chopped - 0.5 cup
Broccoli, chopped - 3/4 cups
Green bell pepper, chopped - 1
Ground black pepper - 1/8 teaspoon 
Soy sauce (optional item) - 1 teaspoon

The Making

1). Prepare a soup pot, adjust to high heat. Pour in 0.5 cup of stock; boil it. Add in onion, ginger and garlic and cook for about 3 minutes.

2). Add in soy sauce and remaining 5.5 cups stock; bring to boil. Add in the remaining ingredients and bring to simmer for 10 minutes. Serve hot.


Vegetable Noodle Soup

Ingredients

(Servings : 2)

6 cups of Chicken stock, 1 cup of Water, 2/3 cup of Dry small shape pasta, 2 tablespoon of Canota oil, 3/4 cup of Onion (diced), 3 Stalk celery (diced), 4 Carrot (peeled and sliced thinly), 1 garlic clove (minced), 3/4 teaspoon Thyme (chopped), 1 Bay leaf, 1/2 cup of Frozen peas (thawed), 2 tablespoon of Snipped chives. Seasoning : sea salt and ground black pepper to taste

The Making

1). Prepare a large soup pot; put in canola oil and heat over medium heat.

2). Add carrot, onion, celery into soup pot and cook for about 10 minutes until tender.

3). Add in thyme, bay leaf, garlic, cook for another 3 minutes. Add in chicken broth and water, simmer for about 20 minutes.

4). Add in seasoning to taste and pasta; simmer for another 5 minutes until tender.

5). Remove soup pot from heat. Stir in chives and peas before serve.


Cool Summer Vegetable Soups

Ingredients

(4 servings)

Chicken stock - 3 cups, Bell pepper (roasted, peeled and chopped) - 4, Plain yogurt - 1/4 cup, Italian plum tomatoes (peeled and quartered), Ground ginger - 0.5 teaspoon, Fresh lemon juice - 1/4 to 1/2 cup, Sugar - 0.5 teaspoon, Freshly ground pepper - 0.5 teaspoon, Milk - 1/4 cup. For garnish : Large crouton.

The Making

For roasting of bell peppers: Preheat the frill or broiler. Cut the pepper into half and remove seed and stem. If you are using broiler, place cut side down, on baking sheet, and broil in oven for 3-5 minutes until skin blister and turn black(about 3 inches from heat). If you are using open grill, place skin side down and roast until skin is evenly charred. Remove and place skin in the bag. Seal and let steam for 15 minutes. Remove from bags and peel away the skin.

1). Prepare a saucepan, mix in roasted peppers, pepper, ginger, tomatoes, chicken stock and lemon juice to taste. Cover and simmer for about 35 minutes. Remove from heat; set aside to let it cool.

2). Transfer the above mentioned to a blender and puree. Return to saucepan, add in milk, sugar and yogurt to blend. Chill for 3-4hours. Serve in chilled bowls and garnish with a large crouton before serve.


Royal Vegetable Soup

Ingredients

Short ribs (not too fat) - 2 pounds
Marrow bone (may be removed later) - 1
Whole barley - 2 tablespoons
Carrot, peeled and sliced - 3
Stalk celery - 2-3
Green beans - 10
Split peas - 2 tablespoon
Baby limas - 2 tablespoons
Whole onion - 1
Turnip or parsnip - 1
Sweet potato - 1
White potato - 1
Cabbage, cut in small pieces - 0.5 head
Tomatoes - 1 can
Alphabet Macaroni - 2 heaping tablespoon
White pepper to taste

The Making

1). Prepare a large soup pot, add water and salt to ribs and marrow bone; bring to boil. Scape off scum. Add whole barley, onion, baby limas, split peas; boil for about 1 hour. Remove onion. Cut up and add vegetables. Boil until vegetables are tender. Add macaroni and white pepper in the last 4 minutes. Serve hot.
