Low Fat Turkey Soup Recipes
Ingredients (7 servings)6 pounds of Turkey breast, 1/2 pound of Italian pasta, 2 Onion (peeled and cut in large piece), 3 Stalk celery (sliced), 1 teaspoon of Dried thyme , 1/2 teaspoon of Dried rosemary, 1/2 teaspoon of Dried sage, 1 teaspoon ofDried basil, 1/2 teaspoon of Dried Marjoram, 1/2 teaspoon of Dried Tarragon, 1/2 teaspoon of black pepper, 1/2 teaspoon salt.
The Making 1). Prepare a large soup pot, put in turkey breast, onion & celery and cover by enough water; bring to simmer over medium heat for 2 hours. 2). Remove the carcass from pot. Pour soup into a container and place into refrigerator & let it cool for awhile. After cooling, skim off fat. 3). While soup is cooling, remove remaining meat from turkey carcass. Cut in pieces. 4). Add the turkey meat to skimmed soup including spice & herbs. 5). Bring to boil. Once boiling, add in pasta; reduce heat and simmer for 20 minutes until pasta are cooked. 6). Serve. Yummy! Turkey Noodle Soup Fantastic Lunch @ Dinner!
Ingredients (10 servings)Turkey carcass, from a 15-20 pound turkey, Fine egg noodles - 4 cups (8 ounces), Water - 5 quarts, Chicken bouillon cubes - 7, Celery with leaves (chopped) - 1 1/2 cup, Onion (chopped) - 1 cup, Fresh parsley (chopped) - 1/2 cup, Fresh or/Frozen peas - 1 cup, Fresh or/Frozen beans - 1 cup, Carrots (sliced) - 1 cup, Butter or margarine - 1/4 cup, Flour - 1/4 cup, Bay leaf - 1, Salt - 1 tablespoon, Ground Black pepper - 1/4 teaspoon.
The Making 1). Place turkey bones, water & bay leaf in an 8 quarts kettle or Dutch oven. Boil it. Reduce heat and simmer for 1 hour. 2). Remove the bones to a platter and let it cool. 3). Add onion, celery, carrot, green bean, parsley & chicken bouillon cubes, boil it again. Reduce heat, simmer for 10 minutes. 4). Meanwhile, cut meat from carcass and return the meat to soup pot. Add water if required. 5). Heat to boiling, add noodles and cook for 10 minutes. 6). Prepare a saucepan, melt butter and stir in flour, cook over low heat, stirring constantly until the flour brown. Stir flour mixture into the boiling soup. 7). Reheat the soup, season to taste and simmer for 5 minutes. Serve. Yummy!
Hot and Sour Turkey Soup Recipes
Ingredients for Hot and Sour Turkey Soup Recipes (4 servings)Cooked turkey, shredded - 2 cups, Chicken stock - 3 1/2 cups, Fresh mushroom, sliced - 2 cups, Grated ginger root - 1 teaspoon, Cornstarch - 1 tablespoon, Cold water - 1 tablespoon, Bok Choy (sliced) - 2 cups, Fresh or frozen peas pods - 6 oz, Egg, beaten - 1, Green onions (sliced thinly) - 3 tablespoons, Rice vinegar or white vinegar - 3 tablespoons, Soy sauce - 2 tablespoons, Sugar - 1 teaspoon and Pepper - 1/2 teaspoon
The Making 1). Prepare a saucepan, pour in chicken stock, vinegar, onion, mushroom, soy sauce, sugar, pepper and ginger root; bring to boil. 2). Meanwhile, combine cornstarch and water in a small bowl, stir well. 3). Stir cornstarch mixture into chicken stock, cook and stir for 2 minutes until thickened and bubbly. 4). Add in bok choy, turkey and pea pods. Pour the egg into the soup gradually. Remove from heat. Stir in green onions before serve.
