Homemade Tortilla Soup Recipe

This delightful Homemade Tortilla-Soup-Recipe can be served with the fried tortillas, freshly diced avocado, grated cheddar cheese, and sour cream. This soup is a little spicy & extremely great for party or dinner :)

Ingredients
(8 servings)

Canola oil - 8 tablespoon

Corn tortillas (10 - 12 inches) - 5

Onion, peeled and diced - 1

Garlic cloves, peeled and minced - 6

Cilantro, remove stems and shopped - 1 small bunch

Canned diced tomatoes - 2 (14.5 ounces)

Chicken broth - 8 cups

Canned frozen corn - 14 ounces

Ground cumin - 3/4 - 1 1/2 tablespoon

Chili powder - 1 tablespoon

Bay leaves - 4

Chicken breast halves or thighs, boneless, skinless (Rinse under clean water and dried) - 4

Cayenne pepper - 1/2 teaspoon

Juice from 1 Lime

The Making

1). Cut 2 tortilla into 1/4 inch strips. Prepare a saucepan, put canola oil, and fry tortilla strip until golden brown (Be careful, don't get burn). Transfer the fried tortilla strip onto a paper towel to drain. Season with some salt.

2). Heat the oil in a soup pot, saute onions for few minutes. Add garlic and saute for another few minutes. Tear the another 3 corn tortilla into bite size piece and add into the same pot.

3). Add cilantro into the pot, stir cooking for 1 minute. Add in chicken broth, canned tomatoes including their juice, cumin, chili powder and bay leaves; bring to boil. Reduce heat. Add in chicken breast or thigh, corn, cayenne. Cover and simmer for 15 - 20 minutes. Remove the chicken breast and put on a plate for cooling. Turn off the soup..

4). After the chicken breast become cool, shred them with hand and return to the soup pot. Add lime juice. Add spices. If you prefer hotter taste, add more spices. Reheat.

5). Serve soup with Fried tortilla strips.
