Tomato-soup is a soup made from tomatoes. It is commonly used as an ingredient in more complex dishes, and, unlike most savory soups, it may be served either hot or cold. It can be made from chunks of tomato or with only a puree. Here, i would like to share with you this healthy, easy making & delightful highly rated Homemade Tomato-Soup. Let's check out. Ingredients
For ingredients, you need to prepare for 3/4 cup of Extra virgin olive oil, 1 cup of Chicken stock, 1 Canned chopped tomatoes (14 oz), 2 tablespoons of Butter, 1 Stalk celery(diced), 1 Carrot (diced), 1 Yellow Onion (diced), 2 Cloves garlic (minced), 1 Bay leaf, 1/2 cup of Heavy cream, 1/4 cup of Fresh basil parsley (chopped). Seasoning : Salt and freshly ground black pepper.
The Making
1). Strain the canned tomatoes and reserve the juices, spread on a baking sheet, add seasoning to taste; drizzle with 1/4 olive oil and roast for about 15 minutes until caramelized. 2). Meanwhile, prepare a saucepan, heat remaining olive oil, add in celery, onion, carrot & garlic, cook until tender. Add in roasted tomatoes, reserve tomatoes juice, bay leaf, butter and chicken stock. Simmer for 20 minutes until veggies are tender. 3). Add in cream and basil, puree until smooth. Serve.
