Ingredients For ingredients, you shall prepare for 2 pounds of fresh tomatoes (quartered), 1 large yellow onion (quartered), 3 clove garlic, 4 bay leaves, 1 tablespoon of dry basil, 1/8 teaspoon of cloves, 3 tablespoons of brown sugar, 2 cans of vegetables broth (15 oz), 1 large can of tomato paste, 8 tablespoons of olive oil, salt and pepper to taste. The Making Heat a saucepan over medium heat, add in olive oil and melt butter. Saute tomato and onion until soft. Add in garlic, bay leaves, basil, cloves, brown sugar, pepper, salt and 1 can of vegetables stock, bring to simmer for about 45 minutes over Low heat. Remove from heat and discard the bay leaves. Let the soup cool a little bit. Transfer the soup into a blender and puree well. Transfer back the puree to the pan by strain the puree by a fine strainer. Add in 1 can of tomato paste & the remaining 1 can of vegetable stock into the puree. Heat through. Serve hot.
Tomato & Barley Soup

Ingredients Well, for ingredients, you shall prepare for 75g of pearl barley, 2 tablespoons of oil, 1 large onion (peeled and finely chopped), 2 garlic cloves (crushed), 1 courgette (trimmed and diced), 400g canned tomatoes, 2 tablespoons of tomato puree, 1 tablespoon of mix dry herbs, salt and pepper, 450ml chicken stock (you also can use Vegetable stock, if you like) The Making Firstly, prepare a pot, pour in water and barley, bring to cook for 30 minutes until soft. Drain and set aside. Prepare a saucepan, heat oil, saute garlic and onion for 5 minutes until soft. Add in barley and courgette and cook for another 5 minutes. Add in tomatoes, tomatoes puree, mix herbs, salt and pepper. Add in stock and cook for about half an hour until barley are tender. Serve hot. Yummy!
