Tomato Basil Soup

I love to make this Tomato-Basil Soup during weekend. My sister love this soup so much, and so do i! :)The longer you let the tomatoes and juice simmer before adding the cream, the more intense flavor you will have. Ingredients Well, for ingredients, you shall prepare for 1 medium onion, 1 tablespoon of olive oil, 2 large cans whole tomatoes (chopped into bite size piece), 4 cups of chicken broth, 6 sprigs of basil tied with string, basil leaves (sliced in strips), 1 cup of heavy cream, 2teaspoons of balsamic vinegar, 1 tsp of shallots (minced), salt and pepepr to taste. The Making Heat a heavy bottomed pan over medium heat, add in olive oil, saute onion until soft. Tie basil together with twine (or sliced into strips). Add tomatoes, basil, chicken broth, season with salt and pepper. Cover the lid and bring to boil, reduce heat and simmer until soup reduced by 1/4. Remove the basil bunch and puree soup mixture in a blender. Transfer back to pan and reheat, add in balsamic vinegar and stir in heavy cream. Garnish with basil before serve.
