In fact, this Thai soup is currently under scientific study, as it appears to have immune-boosting power as a natural remedy for cold and flu viruses. Ingredients Well, you shall prepare for 2 quarts of chicken broth, 2 stalk of lemongrass (sliced on a bias in 2 inches pieces), 4 kaffir lime leaves, 1 inch piece of fresh galangal or ginger (sliced), 2 red chiles (sliced), 2 tablespoons of fish sauce (eg. nam pla), 1.5 teaspoons of sugar, 1 can of straw mushrooms (rinsed and cut into half), 1 pound of large size shrimps (peeled but remain the tails), juice from 2 limes, 2 green onions (sliced), 1/2 cup of fresh cilantro (chopped). The Making Firstly, prepare a saucepan, pour in stock and bring to boil over medium heat. Add in lemongrass, kaffir lime leaves, galangal and chiles. Reduce heat to medium low heat, simmer the soup for 15 minutes. Add fish sauce, mushrooms, and sugar. Simmer for another 5 minutes. Add in shrimp and cook for another 8 minutes. Remove the heat and add lime juice, green onion, cilantro. Taste for salt and spices, you should have an equal balance of spicy, sour and salty. Kindly note that lemongrass and lime leaves are for flavor only and avoid from eating.
