Homemade Cream of Wild Mushroom Soup Try out this creamy wild mushroom soup. Delicious and Easy.

Ingredients (4 servings)For the Soup 1 jar of porcini dried mushrooms soaked over night, Gardening basket full of Portobello flat capped mushrooms, Butter, Rape seed oil, Chopped onion, Few cloves of roasted garlic, Vegetable stock, Fresh cream and or a sprinkling of flour, Sea salt, White pepper, Truffle oil & Celery For the Stock Carrots, Celery, Parsnip, Onion, Parsley, Thyme, Coriander, Bay leaf, Mix peppercorns, Sea Salt The Making For the Soup Heat butter and rape seed oil. Saute mushrooms, onion and garlic for 5 minutes. Add in vegetable stock and bring to simmer for about 20 minutes over medium heat. Liquidise and thicken with fresh cream or a sprinkling of flour and season.Serve into individual soup cups or bowls and add a 'tear drop' of truffle oil.Serve over a stick of celery. For the Stock Place carrots, celery, parsnips, onion, parsley, thyme, coriander, bay leaf, mix peppercorns and a pinch of Maldon sea salt in a large pan of water. Boil until reduced and full of flavour.
Homemade Salmon Noodle Soup The soup is healthy, nice and filling and yet surprisingly light and good. I will be making this again! I just Love this soup very much...........!

Ingredients 2 packages of udon noodles, 4 cups of dashi, 6 shiitake mushrooms (sliced), 2 tbsp of miso, 1 cup teriyaki salmon (cooked and flaked), 2 handfuls spinach and 2 green onions (chopped) The Making Firstly, you shall cook the noodles in accordance to the directions shown on the package. Prepare a soup pot, put in dashi and mushroom, cover with enough water and bring to boil. Reduce heat and simmer few minutes. Mix the miso into a ladle full of the dashi and then pour it back into the dashi. Divide the cooked noodles, salmon and spinach between 2 bowl and pour the broth in. Garnish with green onions before serve. Serve hot.
Homemade Shrimp Soup This soup was learn from my friend, Melissa during my visit to her house. She prepare this soup for my lunch. I love this soup very much! Good try!

Ingredients 100g of shrimp, (peeled and deveined), 2 cups of vegetable stock, 1 teaspoon of salt, 1/2 teaspoon of freshly ground black pepper, 1 tablespoon of olive oil, 1 medium onion (peeled and chopped), 1 red or yellow bell pepper (roasted & chopped),3 garlic cloves, 2 diced tomato, 2-3 threads saffron. The Making Firstly, heat olive oil in a saucepan, saute onions for 2 minutes until soft. Add in bell pepper, tomatoes, saffron, garlic and vegetable stock. Bring to simmer for about 15 minutes over medium high heat. Add in shrimp and simmer for another 5 minutes longer until shrimp turn into pink colour. Serve hot.
