Hot and Spicy Tom Yam Thai Soup

When you go to Thailand, Tom Yam Soup is the soup that you must try. It is perhaps one of the most famous dishes in Thai cuisine. Try out this soup recipe, damn excellent! Yummy........!

Ingredients

To prepare 5 crushed hot red chilies, 1 cup sliced mushrooms, 2 stalk of lemongrass (sliced), 1/2 cup of onions (peeled and sliced), 1/2 cup of galangal (sliced), 1/2 cup of tomatoes (sliced), 6 kaffir lime leaves, 4 teaspoons of lime juice, 4 tablespoons of fish sauce, 1 teaspoon of sugar, 1 tablespoon of shrimp paste, 1 litre of water, 10 shrimps (peeled off the head, deveined), 2 tablespoons of spring onion (chopped coarsely), 1/2 teaspoon of salt, 2 stems of fresh coriander, 4 stems of fresh parsley.

The Making

Firstly, prepare a soup pot, pour in water and bring to boil. Add in lemongrass, galangal, shrimp head, shrimp paste, onion and cook until fragrant. Add in tomatoes, mushrooms and shrimp meat, cook until shrimp turn into pink color. Season with salt, sugar and fish sauce to taste. Stir occasionally. Add lime juice, spring onions, parsley, coriander and lime leaves. Serve hot.


Excellent Chicken & Shrimp Thai Soup

Ingredients

Well, you shall prepare for 3 cups of 0% fat, reduced sodium chicken broth, 1 cup of bottles claim juice, 1 tablespoons bottled minced garlic, 1.5 tsp of bottled minced fresh ginger, 3/4 tsp red curry paste, 1 package of pre-sliced mushrooms, 1/2 lb of large sized shrimps (peeled and deveined), 1/2 lb of skinless, boneless chicken breast (cubed), 1 package of trimmed snow peas, 1/4 cup of fresh lime juice, 2 tbsp sugar, 2 tbsp of sliced green onions tops, 2 tbsp of chopped fresh cilantro.

The Making

Prepare a soup pot, add in chicken broth, claim juice, fish juice, garlic, ginger, curry paste. Stir with a whisk. Add in mushrooms and bring to boil. Reduce heat and simmer for 4 minutes.

Add in snow peas, chicken cubes, shrimp, bring to boil and simmer for about 3 minutes. Add in lime juice and all remaining ingredients. Cook for another 2 minutes and serve hot.


Excellent Coconut Thai Soup

Try out this great milky soup!

Ingredients

Well, you shall prepare for 1 lb of medium shrimp (peeled and deveined), 2 cans of canned coconut milk, 2 cups of water, 1 piece of galangal (sliced thinly), 4 stalk of lemon grass (chopped), 10 kaffir lime leaves (torn in half), 1 lb of shiitake mushrooms (sliced), 1/4 cup of lime juice, 3 tbsp fish sauce, 1/4 cup of brown sugar, 1 tsp of curry powder, 1 tbsp green onions (thinly sliced- optional item), 1 tsp of dried red pepper flakes (optional item).

The Making

Cook shrimp in boiling water for 1 minutes, drained and set aside.

Prepare a saucepan, pour in coconut milk and 2 cups of waters, bring to simmer. Add in lemon grass, lime leaves, galangal and simmer for 10 minutes. Strain the coconut milk into a new pan and discard the spices.

Add in shiitake mushrooms in the coconut milk and cook for about 5 minutes. Add in lime juice, fish sauce and brown sugar. Season with curry powder to taste. Add in cooked shrimp for 1 minutes. Sprinkle green onions and red pepper flakes before serve (optional).
