Looking for Thai-Soup Recipe? Here is the great one. You can get the ingredients from Asian or Chinese Grocery. Here, I would like to share with you a Famous Thai Soup Recipe, Thai Pumpkin & Shrimp Soup. This Soup was shared by one of my Thai Friend, Tina Tang. Thanks, Tina. I have been cooked for this soup very many times and i just love this soup very much! This soup is perfect for the fall or winter. This warming soup recipe features pumpkin or squash paired with shrimp :)

Besides of this soup, i wish to share with you another FAMOUS Thai Soup, Tom Yum Soup Recipe. It is really GREAT........!

Ingredients

(5 servings)

You shall prepare 4 cups of chicken broth, 1 can of coconut milk, 4 cups of peeled pumpkin or squash (cubed), 10 medium sized raw shrimps, 1/2 medium cucumber (cubed), 1 red bell pepper (cut into bite size pieces), 1 red chili pepper (sliced) or you can use 1 teaspoon of dry chili flakes. 3 kaffir lime leaves (available in Asian/ Chinese grocery), 3 clove garlic (minced), 2 shallot, 3/4 teaspoon of shrimp paste (available in Asian/ Chinese grocery), 2 tablespoons of fish sauce, 2 tablespoons of lime juice, 3 teaspoons of sugar, 1 handful of fresh basil.

The Making

Prepare a saucepan, heat oil over medium heat and saute garlic, shallots, chili or chili flakes for few minutes until fragrance. Pour in chicken stock and kaffir lime leaves. Bring to boil.

Add in pumpkin or squash. Reduce heat and simmer for about 8 minutes until pumpkin are soft. Add in shrimp paste, lime juice, fish sauce and sugar. Cook for 3 minutes.

Add in shrimp and red pepper. Simmer for another 2 minutes. Reduce heat to low and add in coconut milk and cucumber. Cook for 2 minutes and stirring constantly. Sprinkle with basil before serve.

Our suggestion for you : If you prefer salty taste, add more fish sauce. If you prefer spicier, add more chili. If you prefer sweeter, add more sugar. :)
