Try out this Wonderful Soup!Ingredients (7 servings)For ingredients, to prepare 32 oz Vegetables stock, 14.5 oz Stewed tomatoes, 1/2 cup of Macaroni (uncooked), 2 tablespoons of Olive oil, 2 Clove garlic (minced), 1 Small onion (chopped), 2 cups of Zucchini (diced), 2 Stalk celery (chopped), 1 Carrot (peeled grated), 1 cup of Frozen sweet peas (thawed), 1 cup of Cannellini beans (you can also choose your preferred beans), 1/2 cup of Grated Parmesan cheese, Salt - to taste, Pepper - to taste
The Making Prepare a saucepan, put in oil, saute garlic and onion until light golden. Add and saute zucchini and celery for another 2 minutes. Add in all remaining ingredients except Parmesan. BRing to simmer for about 10 minutes until pasta cooked. Stir in cheese and season for taste. Serve with crusty bread.
