Easy Stock Pot Pumpkin Soup

Try out this creamy pumpkin soup. Easy to make and delicious, is the best stock pot soup to serve your guests in special event. Enjoy!

Ingredients

Well, for ingredients, you shall prepare for 500g pumpkin (peeled and cut into chunks), 1 white onion (peeled and finely chopped), 600ml chicken stock (or water and chicken stock cube), 25g butter, 300ml hot milk, pinch of allspice, salt and pepper to taste, 1 small handful of parsley for garnish.

The Making

Firstly, you shall melt butter in a large stock pot and gently saute onions for about 10 minutes until onion is soft. Pour in chicken stock and bring to boil. Add pumpkin chunks reduce heat, simmer for about half an hour until tender.

Let the soup cool down a bit. Transfer into a blender or food processor, puree until smooth. Return to pan and add hot milk, allspice, salt and pepper to taste. Heat through gently. Serve hot with lightly sprinkle chopped parsley or cream as desired. We are done :)


Homemade Stock Pot Chicken Soup

This homemade chicken soup was learn from my beloved Grandma. She love to cook this soup since i was a kid. This is my favorite stock pot soup and it is so tasty..........! You can add your preferred vegetables to achieve the perfection of this soup. Enjoy :)

Ingredients

Well, for ingredients, you shall prepare for 2 chicken breasts with bone & Skin, 1 tablespoon of olive oil, 3 cloves garlic (minced), 1 large onion, 32 ounces chicken stock, 3 stalks celery (chopped coarsely), 2 carrots, (peeled and chopped), 1 cup 7 bean soup mix, salt and pepper to taste, 2-3 tablespoons fresh Italian herbs, whatever you have on hand; basil, rosemary, thyme, oregano, parsley or 1-2 tablespoon dried Italian seasonings, 1/2 cup string beans (cut in half), 1/2 cup of sweet corn, 1/2 cup tomatoes (remove the seed & diced), 1 cup pastaParmesan cheese for serving.

The Making

Prepare a stock pot, heat olive oil and brown chicken for about 5 minutes. Add in garlic, onion, salt & pepper to taste and cook for another 5 minutes.

When Chicken is browned, add 3 cups of water, bring to a boil. Reduce heat and simmer for about half and hour over medium low heat. Remove chicken to cool for a few minutes. Add in chicken stock, celery, carrots, beans, and seasonings including salt and pepper.

When chicken is cooled enough to work with remove from bone, remove skin and rough chop; add it back to the soup. Simmer for another half an hour or so depending on your beans. If you soaked them first a half an hour is enough time, if not simmer for about an hour; then add in corn, string beans, tomato, and pasta.

At this point (if the smell hasn’t had you already dipping into the pot) you want to taste and check on the seasonings. You may need to add more Italian seasoning and/or salt and pepper. Simmer for another 20 minutes until pasta and beans are cooked through. Serve hot and enjoy :)


Potato Stock Pot Soup

For those Potatoes Lover....... ! Yummy! Awesome Soup!

Ingredients

Well, for ingredients, you shall prepare 3.5 cups of peeled and diced potatoes, 1/3 cups of diced celery, 1/3 cups of finely peeled and chopped onion, 3/4 cups of diced cooked ham, 3.5 cups of water, 2 tablespoons of chicken bouillon granules, 1/2 teaspoon of salt, 1 teaspoon of ground white or black pepper, or to taste, 5 tablespoons of butter, 5 tablespoons of all-purpose flour, 2 cups of milk.

The Making

Firstly, you shall prepare a stock pot, place in potatoes, onion, celery, ham and water. Bring to boil. Reduce heat to low and simmer for about 15 minutes until potatoes are tender. Add in chicken bouillon, salt and pepper.

In another saucepan, melt butter and whisk in flour with a fork. Cook stirring for about 1 minute. Gradually stir in milk and continue stir cooking for about 5 minutes over low heat.

Stir the milk and flour mixture into the soup pot to thicken the soup. Serve hot.
