Ingredients
To prepare 1½ cups dry chickpeas, 1 cup chopped onion, 1 minced clove garlic, 1 tbsp Safflower oil (or any other allowed oil), 6 cups of water (add more if needed during cooking), 2 tbsp Soy sauce (or less), 1/4 cup chopped parsley, 1/4 cup chopped peanuts (optional)
The Making
1). Combine chickpeas and enough water to cover; then, put into refrigerator for overnight. Drain.
2). Cook onion and garlic in oil for 2 minutes, add in chickpeas, soy sauce and 6 cups of water. Bring it to boiling, reduce heat, cover and simmer for about 3 hours.
3). Pour into blender and process until smooth. Reheat and serve with parsley and peanuts.
4). Serve
