Pinto Bean Soup Recipe — Phase 2

(7 servings)

Ingredients

For ingredients, you need to prepare for 1 pound of dried pinto beans, 8 cups of water, 1 medium diced onion, 1 green diced bell pepper, 1 minced garlic clove, 2 tablespoon of Worcestershire sauce, 1 tablespoon of favorable chili powder, ¾ tsp salt, ½ tsp dry mustard, ¼ tsp pepper and 1 can of Rotel

The Making

1). Put the beans in a large Dutch oven; add water to about 2 inches above beans. Boil it for 1 minute; cover the lid, remove from heat, and let stand for 1 hour. Drain.

2). Take the beans and 8 cups water to boiling. Cover the lid, reduce heat, and simmer until beans are tender (About 1 hour). Add onion, pepper, garlic, Worcestershire sauce, chili powder, salt, dry mustard, and pepper; simmer for half and hour. Then, add tomatoes; simmer for half an hour more.

3). Serve




Chickpea Soup: Phase 1, Phase 2 and Phase 3

Ingredients

To prepare 1½ cups dry chickpeas, 1 cup chopped onion, 1 minced clove garlic, 1 tbsp Safflower oil (or any other allowed oil), 6 cups of water (add more if needed during cooking), 2 tbsp Soy sauce (or less), 1/4 cup chopped parsley, 1/4 cup chopped peanuts (optional)

The Making

1). Combine chickpeas and enough water to cover; then, put into refrigerator for overnight. Drain.

2). Cook onion and garlic in oil for 2 minutes, add in chickpeas, soy sauce and 6 cups of water. Bring it to boiling, reduce heat, cover and simmer for about 3 hours.

3). Pour into blender and process until smooth. Reheat and serve with parsley and peanuts.

4). Serve






Spicy Lentil Soup Recipe — Phase 1, Phase 2 and Phase 3

Ingredients

To prepare 1 tbsp of oil, 1 cup chopped onion, 3/4 cup diced green pepper, 3/4 cup diced red bell pepper, 4 cloves (finely chopped), 6 cups of water, 1 can diced tomatoes, 2 cups dried red or green lentils (rinsed and drained), 2 tbsp red wine vinegar, 1 1/2 tsp cumin, 1 1/2 tsp salt, 1 tsp paprika, 1/4 tsp red pepper flakes

The Making

1). Heat oil in a dutch oven over medium heat. Add in the onions, bell peppers and garlic; cook for about 2 minutes.

2). Add remaining ingredients (water through red pepper flakes) Bring to a boil. Reduce heat and simmer, partially covered, stirring occasionally, until lentils are tender, about 25 minutes

3). Serve
