Yellow Pepper Consomme with Sundried Tomato Puree Soup

Something special for your beloved families. I love this soup very much! Awesome. Good try! :)

Ingredients

Well, for ingredients, you shall prepare for 1 jar roasted yellow peppers (drained, rinsed and seeds removed (about 5 or 6 peppers)), 1 clove garlic (peeled), 2 cans chicken broth with salt and spices (14 oz), dash cayenne pepper.

For garnishing, you shall prepare for 1 jar of Bella Terra Sun-Dried Tomato Pesto (3 ounces) (optional item)

The Making

For making of the consomme, you shall place all ingredients into a blender and puree until smooth. (You may refrigerate the consomme until you ready to serve it. 1 day actually helps the flavor.)

Heat a saucepan over medium heat, pour in consomme and heat through gently.

When serving, ladle soup into bowls and center a teaspoonful of sun-dried tomato pesto in each bowl.

If you cannot find broth with salt and spices, you can use low-salt chicken broth and add 1/2 teaspoon salt, 1/4 teaspoon garlic powder, 1/4 teaspoon onion powder and 1/4 teaspoon black pepper.

Minestrone Soup Receipe

One of the popular soup in Italy. This soup ranges in texture from thick and dense to a broth soup with lightly cooked veggies. Enjoy this Minestrone Soup on a wet rainy day, and savor the history and flavor of this popular soup.

Ingredients

(6 servings)

Well, you shall prepare for 1 tablespoon of olive oil, 2 medium onions (peeled and finely chopped), 2 garlic cloves (finely chopped), 14 ounces can chopped tomatoes, 1 tablespoon of Italian seasoning, 1 carrot (peeled and finely diced), 1 1/2 potatoes (peeled and finely diced), 9 ounces of peeled pumpkin or winter squash (finely diced), 4 cups vegetable or chicken broth, 14 ounces. can cannellini beans (drained and rinsed), 4 oz. leafy cabbage or other greens, 3 oz. pasta (such as macaroni or shells), 3 cups water, Salt and pepper to taste, Parmesan cheese for garnishing

The Making

Heat olive oil in a saucepan . Saute onion and garlic for few minutes until soft. Add in tomatoes, carrot, potato, pumpkin, water and stock. Bring to boil and stir occasionally.

Reduce heat to low, add in beans & cabbage, cook for about 45 minutes until vegetables are tender.

In a separate pan, bring salted water to a boil and add pasta. Cook until tender and add to the soup. Add salt and pepper to taste. Garnish with parmesan cheese and chives before serve.


Homemade Curried Carrot Soup Receipe

This is the fantastic soup which i continuing to cook for few days...because this soup is too tasty and impressive! My mother and I love this soup very much! You should give a try! :)

Ingredients for Homemade Curried Carrot Soup Receipe

For ingredients, you shall prepare for 3 tbsp of butter, 1/2 of medium onion (peeled and roughly chopped), 3/4 lb carrots (peeled and cut into 1/2-inch coins), 1 tsp peeled and grated fresh ginger, 1/4 tsp ground cumin, 1/4 tsp ground tumeric, 1/4 tsp ground coriander, Pinch cayenne pepper, 2 cups chicken or vegetable stock, 1 cup unsweetened coconut milk, juice from 1/2 lime, salt and freshly ground pepper & Cilantro

The Making

Prepare a saucepan, heat the butter until the foam subsides. Add in chopped onions, salt to taste, stir to coat with butter. Add the chopped carrots including spices. Stir and cook until soft for about 10 minutes.

Pour in stock and bring to boil over high heat. Reduce heat to medium and continue cooking for about 15 minutes until the carrots are cooked.

Transfer soup into a blender and puree until smooth. Add enough coconut milk (and a little more stock or water if necessary) to bring the soup to your desired consistency. Adjust the seasoning (depending on the stock you use, you may need more or less salt), and lime juice to taste. Garnish and serve hot. Enjoy! :)
