Here is a tasty, easy & refreshing Sorrel-Soup Recipe to share with you. Sorrel is a hardy spring herb. It has a special sour taste which is refreshing in a soup. Do you know that sorrels can help to enhance the body's immune system in general? It also useful in relieving symptoms of fever. The leaves of this herb are useful in the prevention and treatment of scurvy which is a deficiency caused by lack of vitamin C. Let's check out this healthy soup. Ingredients (6 servings)To prepare for 3 tablespoons of butter, 1 Spanish onion (peeled & sliced), 2 potatoes (peeled & sliced), 13 fresh sorrel leaves, 2 bay leaves, 6 cracked black peppercorns, 8 cups of chicken stock, salt to taste For garnishing : 3 tablespoons of crème fraîche and 2 sorrel leaves (cut into long thin strips) The Making Prepare a soup pot, melt butter over medium heat. Saute onion for about 5 minutes until soft. Add in all ingredients and bring to simmer for about half an hour over medium heat. Transfer soup into a blender, puree until smooth. Return to pan and season with salt to taste. Heat through gentle. Garnish with sorrel strips and creme fraiche before serve. Yummy!
