Slow Cooker Chicken Taco Soup This soup are perfect with sour cream, cheddar cheese and tortilla chips topping. I believe you will love this soup too :) Enjoy.

Ingredients (8 servings)Well, for ingredients, you shall prepare for 1 onion (peeled and chopped), 1 can of chili beans (16 oz), 1 can of black beans (15 oz), 1 can of kernel corns (drained), 1 can of tomato sauce (8 oz), 1 can or bottle beer, 2 cans of diced tomatoes with green chilies (undrained), 1 package of taco seasoning, 3 whole skinless, boneless chicken breast, shredded Cheddar Cheese (optional item), sour cream (optional item), crushed tortilla chips (optional) The Making Firstly, you shall prepare a slow cooker, put in chili beans, black beans, corn, tomato sauce, beer, onions, diced tomatoes and blend in taco seasoning. Place the chicken breast on top of all ingredients. Cover the lid and cook for about 5 hours over low heat. After 5 hours, remove chicken breast from soup and shred it. Return the shredded into the soup and cook for another 2 hours. Garnish with cheddar cheese, sour cream or crushed tortilla chips before serve.

Ingredients To prepare 2 pounds of ground beef, 1 can of tomato juice (46 fl oz), 1 can of tomato sauce (29 oz), 1 can of kidney beans (drained and rinsed - about 15 oz), 1 can of pinto beans (drained and rinsed - about 15 oz), 1.5 cups of onions (peeled and chopped), 1/4 cup of green bell pepper (chopped), 1/8 tsp of ground cayenne pepper, 1/2 tsp of white sugar, 1/2 tsp of dried oregano, 1/2 tsp of ground black pepper, 1 tsp of salt, 1.5 tsp of ground cumin and 1/4 cup of chili powder. The Making Firstly, brown the ground beef in a deep skillet. Cook over medium high heat until evenly brown. Drain and crumble. Prepare a soup pot, add in ground beef, tomato juice, tomato sauce, kidney beans, pinto beans, onion, bell pepper, cayenne pepper, sugar, oregano, ground black pepper, salt, cumin, chili powder. Bring to boil, reduce heat and simmer for 1.5 hours. If you are using slow cooker, cook for 8-10 hours over low heat)
Potato Leek Slow Cooker Soup Delightful & Tasty Soup.

Ingredients (8 servings)To prepare 8 slices bacon, 8 medium leek (use the white and plate-green parts only - chopped), 3 lb of medium Yukon gold potatoes (peeled and cut into thyme sprigs), 3 thyme sprigs, 8 oz of part-skim cheddar cheese (coarsely grated), 1 cup of chicken broth, 3/4 cup of half & half, 1 box of frozen corn kernels (about 10 oz - thawed), 3 scallions (use green part only - chopped) The Making Firstly, cook the bacon in a large skillet until crisp. Set aside. Leaving 1 tablespoon of bacon fat in skillet, saute leeks and season with salt and pepper for about 2 minutes. Transfer leek to slow cooker. Add in potatoes, thyme and 2 cups of water. Cover the lid and cook for about 1 hour over high heat. Remove thyme sprigs and mash potatoes. Add in remaining ingredients & 3 cups of water. Cook for another 1 hour. Transfer soup into a blender, puree until smooth, if desired to have smooth texture. Return to slow cooker, heat through over low heat. Garnish with scallion and sliced bacon before serve.
