She Crab Soup

She crab soup is a rich soup, similar to bisque, made of milk or heavy cream, crab or fish stock, Atlantic blue crab meat, and crab roe, and finished with a splash of dry sherry. If you cannot get she-crabs, simply substitute any crab meat. Also try experimenting with other shellfish such as lobster and shrimp.

Ingredients

(6 servings)

To prepare 2 cups of Total white she-crab meat and roe, 1 Onion (grated), 3 Stalk celery (minced), 2 tablespoons of Unsalted butter, 1 tablespoon of All purpose flour, 1/4 teaspoon of Ground mace, 1/2 teaspoon of Worcestershire sauce, 1/2 teaspoon of Tabasco, 2 cups of Heavy cream or half & half,  2cups of Milk, 1 splash of Lemon juice, 1/2 cup of Sherry wine. For garnish : Paprika and chopped fresh parsley (Optional). Seasoning : salt and pepper to taste.

The Making

1). Prepare a large pan, put in butter and melt over medium heat. Saute celery and onion until tender. Sprinkle all-purpose flour onto celery and onion, cook for about 5 minutes.

2). Add in mace, thyme, pepper, Worcestershire sauce, Tabasco, lemon juice. Reduce heat, simmer shortly. Add in heavy cream and milk; heat almost to scalding; stirring constantly.

3). Add crabmeat and roe; stirring. Heat through. Add sherry wine. Garnish with paprika and fresh parsley before serve. Enjoy :)
