I wish to share with you 2 highly rated Shark-Soup recipes. They are :

Precious Shark Soup

Ingredients

(6 servings)

Well, for ingredients, you need to prepare for 3/4 pound of shark fillet (sliced into 1/4 inch thick and cut into 1 x 2 inches long strip), 1/4 cup of dried Chinese mushroom, 2 teaspoon of canola oil, 1/2 cup of onion (sliced), 1-1.5 teaspoon of garlic, 1 teaspoon of gingerroot (peeled and minced), 6 cups of chicken stock. 2 tablespoon of reduce sodium soy sauce or to taste, 1/2 teaspoon of freshly ground white pepper, 3/4 pound of mustard greens (tough stems removed, leaves cut into 1 x 2 inches piece), 1/2 cup of yellow bell pepper (sliced), 1/2 teaspoon of Asian Sesame oil, 1/2 teaspoon of hot chili oil and 1/4 cup scallions including some green tops (sliced thinly)

The Making for shark soup

prepare a small saucepan, put in mushrooms, add water to cover all the mushroom well, bring to boil. Remove from heat and let the mushroom soak for 10 minutes or until their caps are soft. Drain the mushroom and cut the caps into thin strip, discard the stem. Set aside the mushroom strips .

Prepare a kettle or Dutch Oven, heat canola oil, add in onion and cook for 1 minutes. After that, add in garlic & gingerroot and cook for another 30 seconds. Add in stock, ground pepper & soy sauce; bring to boil.

Once boiling, add in mustard greens, bell pepper, the mushroom strips, and the shark, cook for about 5 minutes. stir in sesame oil and scallions before serve. Done. Wonderful aroma!

64 calories from fat, 18 protein, 7 Carbohydrates, 7 fat, 168 calories, 97 calcium, 2 iron, 2 Dietary Fiber, 999 Sodium, 999 Vitamin A, 64 Vitamin C, 28 Cholesterol.


Excellent Shark Fin Soup

Shark fin soup is a popular delicacy in China, and is eaten in Chinese restaurants around the world. Usually this soup served at special occasions such as weddings and banquets.

This recipe was given by my friend, Jack who is a chef working in a local Chinese Restaurant which this restaurant is mainly serve for wedding dinner. What i can say about this recipe is, EXCELLENT! I am really crazy about this soup :)

Ingredients

Well, for ingredients, you need to prepare for 120g of dried shark fin (cleaned and soak overnight for at least 8 hours), 120g of fresh chicken (sliced and boiled), 120g crab meat, 4 shallots (sliced), 1 packet of "golden pin mushroom" (optional item), 1 teaspoon of pepper, 1 clove garlic (sliced), 4 cups of chicken stock, 1 teaspoon of salt, 3cm of ginger piece (sliced) and 1 tablespoon of corn flour blended with water.

The Making

Prepare a pan, pour in enough water and boil the soaked shark fin for 2-3 hours. Set aside.

Meanwhile, prepare a deep frying pan, heat oil, fry sliced ginger, shallots and garlic until fragrant. Add in stock, crab meat, chicken meat, golden pin mushroom (optional), salt and pepper. Bring to boil and stir constantly. Add corn flour mixture to desired thickness of soup. Serve hot.
