Elegance Chinese Shark Fin Soup

Here's to tell you how to cook Elegance Chinese Shark-Fin Soup. This recipe was given by one of my friend, Jack who is work as a chef in a local Chinese Restaurant which this Restaurant is mainly serve for the wedding dinners. This soup look so great and taste so good.Shark fin soup is a delicacy that has been a popular item of Chinese cuisine since the Ming Dynasty, usually served at special occasions such as weddings and banquets. As a luxury item, the dish is also considered a symbol of wealth and prestige in Chinese culture.
Ingredients (6 servings)Well, for ingredients, you shall prepare for 2 tablespoons of sesame oil, 1 scallions / green onions (finely chopped), 1 inch of fresh root ginger (peeled and finely chopped), 5 Chinese dried mushroom (soaked in cold water for half an hour, drained and sliced thinly), 2 tablespoons of rice wine, 9 cups of chicken stock, 4 ounces of ready prepared shark fin (soaked for 1 hour in cold water and drained), 8 ounces of boned chicken breast (shredded), 8 ounces of small shrimps (peeled), 1.5 tablespoons of soy sauce, 1.5 cornstarch (mixed well with 1 tablespoons of chicken stock), black vinegar or brandy (optional item)to taste. The Making Prepare a saucepan, heat oil. Saute onions, ginger, mushroom and add in rice wine, cook for about 5 minutes. Stir occasionally. Pour in half of the chicken stock and add in shark fin. Bring to boil. Reduce heat and simmer for 10 minutes. Add in chicken, shrimps and soy sauce. Pour in the remaining chicken stock and cornstarch mixture, bring to boil and stirring occasionally. Reduce heat and simmer for another 10 minutes. Stirring occasionally. Serve with black vinegar or brandy if desired. Our suggestion to you : you can replace the chicken or shrimp by crab meat, the soup will be great too. Normally, i prefer to use crab meat. This is all self-preference :)
