Looking for seafood-soup recipe? This is the best seafood soup that i ever tried before & i really love this delicious soup! Let's check out this Fantastic soup recipe.

Ingredients

(6 servings)

Extra virgin olive oil - 1/4 cup
Clove garlic, sliced - 2
Medium size Onion, minced - 1
Stalk Celery, minced - 1 
Medium Carrot, peeled & minced - 1
Hot red pepper flakes - 1 teaspoon
Dry white wine - 1 cup
Canned crushed Italian plum tomatoes - 1 cup
Black brine - cured olives - 8
Capers, rinsed of salt or vinegar - 8 (optional item)
Rosemary leaves, chopped - 2 teaspoons
Oregano, chopped - 2 teaspoons
Thyme, chopped - 2 teaspoons
Freshly Italian parsley (For garnish) - 1 tablespoons
Fish stock or clam juice or additional white wine - 1 cup
Seasoning : Salt & Ground black pepper - to taste 
Seafood:Squid, cut into 2cm wide rings - 1.5 pound
Littleneck clams - 12 pcs
Fresh mussel - 12 pcs
Monkfish fillet, cut into 2 cm dice - 3/4 pound
Scallops - 12 pcs
Medium size Shrimp, peeled and deveined - 12 pcs

The Making

1). Prepare a large soup pot, put in the olive oil over medium heat. Firstly, add in red pepper flakes, squid, carrot, celery, onion and thinly sliced garlic, cook for 5-8 minutes. Secondly, add in capers, olives, tomatoes, wine, clam, mussels, herb, stock and some salt to taste. Bring to boil over high heat. Reduce heat and simmering for about 2 minutes until all mussels and claims have been open their shells. Uncovered while simmering.

2). Add in monkfish and simmer for another 1 min. Add scallot and simmer for another 1 min. Add in shrimps and simmer for another 2-3 mins. Add in seasoning to taste.

3). Garnish with parsley before serve. Enjoy :)
