Italian Sausage Soup Recipe

This is a fabulous Italian Sausage-Soup Recipe ! I use 1 extra can of broth and then add 1-2 cups of cooked pasta at the end. I have also added few stalk of chopped celery which is very delicious as well. Makes a great winter meal with toasted french bread and a glass of wine. Great!Ingredients To prepare 1 lb of Italian Sausage, 1 clove garlic (peeled and minced), 2 cans of beef broth, 1 can of Italian style stew tomatoes, 2 cups of spinach, 2 zucchini (cubed), 1 cup of carrots (peeled and sliced), 1 can of great Northern beans, undrained. Seasoning : ground pepper and salt to taste. The Making Heat oil in a soup pot, saute onion and sausage. Add in broth, carrot, tomatoes and season with salt and pepper. Bring to simmer over medium low heat for about 15 minutes. Add in zucchini & beans including liquid. Simmer for another 15 minutes. Remove the pot from heat and add in spinach. After 5 minutes, serve the soup. Enjoy!!
