Restaurant Style Ginger Carrot Soup
This soup gets its wonderfully creamy texture from puree carrots and sweet potatoes rather than cream. Must try.
Ingredients
Well, you shall prepare for 2 tsp canola oil, 1/2 cup chopped shallots, 3 cups cubed peeled sweet potato, 1.5 cups sliced peeled carrots, 1 tbsp grated ginger, 2 tsp curry powder, 3 cups fat-free, reduced sodium chicken broth and 1/2 tsp of salt.
The Making
Heat oil in a saucepan over medium heat, saute shallots for about 3 minutes. Add in potato, ,carrot, ginger and curry. Cook for another 2 minutes longer. Add in broth and bring to boil. Reduce heat and simmer for about 25 minutes until vegetable are tender. Season with salt to taste. Transfer soup into a blender. puree until smooth. Return to pan and heat through gently. Serve hot.

Well, for ingredients, you shall prepare for 1 package of fresh frozen tortellini, 1 can diced tomatoes, 2 cans of chicken broth, 2 cups fresh spinach (chopped), 1 stalk celery (finely chopped), 2 medium carrots (peeled and chopped), 1 bay leaf, 2 tbsp fresh basil, 1 tsp fresh parsley, 2 tbsp fresh oregano, 2 tsp garlic (crushed & chopped), 1 onion (chopped), 1 tsp freshly ground black pepper, 2 tsp olive oil and 1 cup water.
The Making
Heat oil in a saucepan, saute celery, carrot, onion and garlic for about 10 minutes. Add in spinach and tomatoes, bring to simmer for about 10 minutes.
Pour in chicken broth and add in spices. Simmer until vegetables are tender. Add water and tortellini and simmer for another 15 minutes more. Discard bay leaf and serve hot.

Well, cream of mushroom soup is a typical soup served in restaurant around the world. Today, i wish to share with you a easy & tasty cream of mushroom soup. This recipe was shared by one of my net friend who is a chef working in a very popular restaurant. I have been cook this soup for many times, because i just love it! Awesome!
Ingredients
Well, you shall prepare for 1/2 cup of butter, 1 pound of fresh mushroom (sliced), 3/4 cup of onion (peeled and chopped), 1/2 cup of celery (chopped), 1/2 cup of flour, 2 cups of milk, 2 cups of chicken broth.
The Making
Melt butter in a saucepan over medium heat. Saute onions, celery and mushrooms for few minutes until vegetables are tender. Stir in flour until well blended. Slowly add in milk and stir well. Add chicken broth and season with salt. Cook for about 20 minutes over low heat until soup is thickened. Do not boil. Stirring occasionally. Serve hot.
