Chinese Sweet Red Bean Soup

This Red-Bean Soup are widely served as dessert or tea time for Chinese. There are two types of red beans: the big and small ones. Red beans tastes sweet and ‘neutral’ in nature. It is great in salads, casseroles or cooked with brown rice too. Ingredients For ingredients, you need to prepare for 1 cup of red beans (small type) (soak in cold water for overnight), 1/3 of sugar or to taste, 1/3 cup of lotus seeds (this is optional item, you can get this ingredient in Asian grocery or health food store, soaked in cold water for overnight), 1 tablespoon of vanilla, 1/4 cup of pearl tapioca (optional item), 1/4 cup glutten rice balls (optional item, can be found in Asian Grocery stores), 7 cups of water. The Making Prepare a large pot, pour in water and red bean, bring to boil. Reduce heat and simmer for about 2 hours. Add in lotus seed (optional), pearl tapioca (optional), rice balls (optional),sugar. Cook for about 20 minutes until soup thickens a little and lotus seeds are tender. Add in vanilla, serve hot for perfect winter dessert, or you can add ice, it is delicious too if the soup is cold. If you cannot found the ingredients for lotus seed, pearl tapioca or rice balls, you can eliminates them. just the red bean and sugar, the soup will still great too.
