This Bacon Baked Potato Soup Recipe was shared by my best friend, Albert Y. Thanks, Albert! This soup is EXCELLENT. I love it so much! Give a good try :)Ingredients Well, you shall prepare for 3/4 chopped leek, 4 garlic cloves (chopped coarsely), 1 tbsp of olive oil, 1 russet pre-baked potato, 2.5 cups of chicken broth, 3 tbsp of heavy cream, 1.5 tbsp fresh chives, 1.5 tbsp of bacon bits and 1.5 tbsp of sour cream. The Making Peel and cut the baked potatoes into 1 inch piece. Set aside. Prepare a saucepan, heat olive oil, saute leek and garlic until soft over medium heat. Add in salt and pepper to taste. Add in reserved potato, broth and heavy cream, simmer for about 15 minutes. Add in grated cheddar cheese. Garnish with sour cream, bacon bits and chives when serving.
