Well, i have some highly rate and popular potato-soups to share with you which these recipes were given by my friend, Mavis who is a Soup Lover too. Check out :

Baked Potato-Soup

This baked potato soup can be top with the cooked bacon and green onions before serving.

Ingredients

(8 servings)

For ingredients, you need to prepare for 10 slices of diced bacon. 1/2 cup of diced celery, 1 cup of diced onion, 1 bunch of green onions (thinly sliced), 4 tablespoons of butter, 1/3 cup of all-purpose flour, 3 cups of chicken broth, 2 cups of half & half, 4 large baking potatoes (baked, peeled and diced), 1 teaspoon of salt, or to taste, 1/4 teaspoon of ground black pepper, 8 oz of sour cream, 8 oz of shredded sharp Cheddar cheese. For garnish : sliced green onion (optional item)

The Making

Prepare a Dutch oven or kettle, cook bacon until crisp over medium heat. Remove bacon to paper towels to drain and pour the bacon dripping into a cup.

Prepare a saucepan, put 2 tablespoons of bacon drippings and butter, chopped onion, celery, cook over medium heat until veggies are tender. Stir occasionally. Stir in the sliced green onion and flour until blended. Stir in chicken broth, cover and continue cooking, stirring always, until the mixture are thickened and vegetables are very tender.

Stir in half & half, diced potatoes, salt, pepper, cheese. Continue cooking until cheese is melted. Blend about half of the soup in batches until smooth. Return the blended soup back to the pot and add sour cream. Cook, stirring constantly, until soup is hot. Garnish with bacon and green onion before serve.




Green Onion Potato-Soup

Only few ingredients needed, not costly, simple making, and...the most important thing is, Delicious!

Ingredients

(4 servings)

To prepare 1 tablespoon of olive oil, 6 medium size of potatoes (peeled and sliced), 1/2 a bunch of green onions (sliced), 1 shiitake or Chinese Black Mushrooms, 1 chicken leg, 1 cup of milk, bay leaves, 1 quart of water.

The Making

Firstly, soak the mushrooms in hot water for about 45 minutes.

Prepare a saucepan, saute olive oil and onions over medium heat. Add in potato, bay leaf, chicken leg, water; cover and simmer for 1 hour over medium heat. Dice the mushroom and add mushroom pieces and the soaking water to the soup.

When the potato are done, smash them with a fork or a potato masher and stir the soup well. Before smash the potato, take out the chicken leg and cut them into bite size piece, then return into the soup. Add milk and season with salt and pepper. Serve hot.

Our suggestion to you : If you are watching your cholesterol, you can eliminate the chicken and milk. The soup is still Great without them.




Mashed Potato Soup

Ingredients

(4 servings)

For ingredients, you need to prepare for 2 tablespoons of butter, 2 cups of cream, 2 carrots (peeled & chopped), 1 cup of mashed potato, 1 stalk celery (chopped), 1 onion (peeled & chopped), seasoning : salt & pepper to taste, parsley (chopped)

The Making

Prepare a saucepan, melt butter and saute carrot, onion, celery until soft and tender. Add in cream and heat almost to boil. Add in potatoes, and stir until blended. Season with pepper and salt. Garnish with chopped parsley before serve. Serve hot.




My Grandma's Potato Soup

This is my favorite soup and it was always cooked by my Grandma. This cooking method is simple and fast. Try it!

Ingredients

Prepare 2 onion (diced), 1 bunch soup vegetables (carrot, leeks & parsley), 15g margarine, 250g potatoes (peeled and diced), 500ml stock, basil, 1 bread roll, 15g butter, salt and pepper.

The Making

Prepare a saucepan, heat margarine, saute onions and soup vegetables. Pour in stock and potatoes bring to boil until all veggies are tender. Pass the soup through a sieve, reheat and season with salt, papper & basil.

Cut bread roll into cubes and fry in the butter until browned. Sprinkle the soup with croutons and 2 tablespoons of chopped chives. Serve hot.
