This Potato & Leek Soup is ridiculously easy making and delicious! I found this soup recipe in a magazine. During my spare time, i will cook this creamy soup and i prefer to use seasoned chicken broth, heavy cream or half and half. Excellent!Ingredients (4 servings)They are only few ingredients shall be used. They are 6 potatoes (peeled and diced), 1 can of chicken broth (14.5 oz), 2 leeks (chopped), 2 tsp of margarine, 1.5 cups of heavy whipping cream. The Making Firstly, heat a soup pot over medium heat, add in chicken broth, potatoes, cover the lid and simmer for about 25 minutes until the potatoes are tender. Heat another separate skillet over medium heat, melt butter or margarine, saute leeks for 10 minutes. Add the leeks and the creams to the potatoes and stir well. You can also take a potato masher to mash the potatoes to make the soup thicker. Serve hot.
