Pepper Soup

Bell pepper-Soup can helps us to diet. It is low in saturated fat, cholesterol and sodium, high in dietary fiber, Vitamin A, E, K, B6. It also help us to maintaining optimum health. For every 1oo g of bell pepper, it contain of 2.5 carbs, 1 g fiber, 0 g fat, 65 energy. Peppers also helps to protect against cancer and heartdisease.

Mixed Pepper-Soup

Ingredients

(4 servings)

Well, got ingredients, you need to prepare for 1 red pepper, 1 green pepper, i yellow pepper (3 peppers shall be cored, seeded and chopped roughly), 2 tablespoons of corn oil, 1 onion (peeled and chopped), 2 tablespoons of chopped fresh ginger, 1 pint of vegetable soup (about 600 ml), 4 tablespoons of low fat natural yogurt (60 ml). Seasoning : salt and pepper to taste.

The Making

1). Prepare a saucepan, heat oil, add in onion and ginger, cook for 3 minutes until soft. Add in red, green, yellow peppers, cook for another 1 minute. Pour in the stock, cover the lid and simmer for half an hour until the peppers are tender. Remove few pieces of pepper from pan and set aside.

2). Puree the soup in a blender until smooth, add in yogurt and seasoning. Transfer back to pan and reheat. Garnish with reserve peppers pieces before serve.

Spiced Chicken Pepper-Soup

I always cook this soup and treat it as dinner. I believe you will satisfy with this soup. (same as me :)

Ingredients

(for 6 servings)

Prepare for 3 pound of chicken (cube), 2 litres of stock, 50g chopped chilies, 100g pepper soup seasoning, 50g ground crayfish, 1 onion, 1 clove garlic (crushed), 50 g chopped mint.

The Making

Prepare a soup pot, pour in stock, add in chicken cubes, onion, chilies, garlic, season with salt to taste, bring to boil for 30 minutes. Add in pepper seasoning, cook for another 30 minutes until chicken are tender. Stir in the crayfish and mint leaves, reduce heat, simmer for 10 minutes. Serve hot.
