Peasant Soup

This is healthy peasant-soup recipe and that is more than enough for 15 people to treat it as a meal. Check out.Ingredients (15 servings)For ingredients, you need to prepare 4 quarts of vegetable stock, Dry mix beans (please soaked for overnight), 2 tablespoons of Olive oil, 1/4 cup of Shallots (chopped), 1 Leek (sliced), 2 Stalk celery with leaves (chopped), 5 cloves garlic (sliced), 1/2 pound Bacon (cut into bite size pieces), 3 Medium carrot (sliced thinly), 1/2 small size cabbage (finely shredded), 2 Onion (chopped), 1 Turnip (cut in cube), seasoning : salt & pepper to taste The Making 1). Prepare a large soup pot, pour in oil, heat the oil over medium heat. Add in bacon and saute it, don't cook until crispy. just to render fat out from the bacon. 2). Add in shallots, leek, onion, celery and garlic and saute for 5 min, stir constantly. 3). Add beans, turnip, cabbage, carrots and cover with vegetable stock. Simmer until all veggies become tender which is take about 2 hours. Season to taste. 4). Serve & Enjoy :)
