Special Peanut-Soup

Ingredients For ingredients, you need to prepare for 7 tablespoons of Peanut butter, 2 tablespoons of Peanut oil, 1 Onion (minced), 3 cloves garlic (crushed), 2 Bell pepper (seeded and chopped), 1 1/2 cup of Carrot (peeled & minced), 1 teaspoon of Cayenne pepper, 3 celery stalks (sliced), 1 1/2 cups of Potatoes (chopped), 2/3 cup of Corn kernels, seasoning : salt and ground pepper. For garnish : roughly chopped roasted peanuts
The Making 1). Prepare a soup pot, heat oil; add garlic and onion; cook for 3 min. Add cayenne pepper and a pinch of salt; cook for 1 more min. 2). Add bell pepper, potatoes, carrots, celery. Add seasoning to taste. Stir well and cook for 4 min, stirring occasionally. Add stock, corn kernels and peanut butter, stir well until combined completely. 3). Season well and bring to boil. Reduce heat, simmer for 20 min until all veggies are soft. Garnish with peanuts before serving.
West African Peanut Soup

Ingredients (10 servings) To prepare 1 Jar creamy peanut butter (18 oz), Peanuts (roasted & chopped) (Optional items), 2 tablespoons of Olive oil, 2 medium onion (finely diced), 2 Large bell pepper (finely chopped), 6 Clove garlic (minced), 1 Canned tomatoes with juice (28 oz), 8 cups of Vegetable broth, 1/4 teaspoon of Pepper, 1/4 teaspoon of Red pepper flakes, 1/2 cup of Uncooked rice. The Making 1). Prepare a soup pot, heat olive oil over medium high heat. Add bell pepper, onion, garlic for about 5 min until lightly browned. Add in broth, pepper, red pepper flakes, tomatoes with juice. Uncovered and simmer for 15 min. 2). Add rice to soup and stirring constantly. Reduce heat and simmer for 25 min until rice is tender. Whisk in peanut butter when rice cooked; return to simmer. Garnish with chopped roasted peanuts before serve.
Cream of Peanut Soup Ingredients (12 servings) 1/4 cup of Unsalted butter, 1 Onion (chopped), 1 Stalk celery (chopped), 3 tablespoons of Flour, 8 cups of Chicken stock, 2 cups of Smooth peanut butter, 1 3/4 cups of Light cream or half & half. For garnish : Peanuts (chopped finely) The Making 1). Prepare a soup pot, melt butter over medium heat. Add celery & onion; cook stirring for 3-5 min until soft. Add in flour, cook for a another 2 min. 2). Add in chicken stock. Bring to boil and stir constantly. Reduce heat, simmer for 15 min until thickened. Pour into a sieve set over a large bowl and strain, pushing hard on solid to extract as much flavor as possible. Return the liquid to the pot. 3). Whisk the peanut butter and the cream into the liquid. Warm over low heat, whisking often, for 5 min. Don't boil. Garnish with finely chopped peanuts before serve. Yummy!
