Here's to tell you how to cook healthy, delicious and not costly Parsnip-Soup.Parsnips is richer in vitamins and minerals than its close relative the carrot. Parsnips are excellent for improving bowel action, and have a beneficial effect on the liver . They have a slight diuretic action and leave an alkaline ash in the body. Ingredients (2 servings)Well, for ingredients, you need to prepare for 1 medium potato (peeled and chopped), 225 g fresh parsnip (peeled and sliced), 350ml stock (either using vegetable or chicken), 1 onion (finely chopped), 1/2 teaspoon of ground coriander, 1/4 teaspoon of ground cumin, 1/4 teaspoon of Turmeric. The Making Prepare a saucepan, place in all ingredients and bring to boil, reduce heat and simmer for about 15 minutes. Stirring occasionally. Remove from heat and allow to cool a bit, then liquidise. Besides of liquidiser, you also can use a potato mash, if the consistency needs to be finer, push the mashed soup through a sieve with the back of a wooden spoon. Serve hot with fresh crusty bread. Yummy!
