For about 8 servings, you need to prepare : 3 tablespoon of olive oil, 1/2 cup chopped zucchini, 1 cup minced white onion (1 small onion), 1/2 cup cut frozen Italian green beans, 4 tsp minced garlic (about 4 cloves), 1/4 cup minced stalk celery (about 1/2 stalk), 4 cups of vegetable broth (P/S: Not to use chicken broth), 2 cans small white beans / or great northern beans (15 ounce) - drained, 2 cans red kidney beans (15 ounce) - drained, , 1 can diced tomatoes (14 ounce), 1/2 cup carrot, cut into long thin strip or shredded, 2 tablespoons fresh parsley (minced), 1 1/2 tsp dried oregano, 1 1/2 tsp salt, 1/2 tsp ground black pepper, 1/2 tsp dried basil, 1/4 tsp dried thyme, 3 cups of water (hot), 4 cups fresh baby spinach & 1/2 cup of small shell pasta. 1). First of all, use large soup pot to heat 3 tablespoons of olive oil over medium heat. Fried onion, celery, garlic, green beans, and zucchini in the oil for approximately 5 min. Add in vegetable broth into the pot, then, add drained tomatoes, beans, carrot, hot water, and spices. Boil the soup, then reduce the heat, simmer for about 20 minutes. Finally, add spinach leaves and pasta and cook for another 20 minutes.
