Mushroom Barley Soup

Want to have a easy & quick making, tasty and healthy homemade Mushroom-Barley Soup in your busy lifestyle? This Great soup recipe can meet your satisfactory. Besides, this soup is low fat soup and it did help me to lose weight during my diet period by eating this soup for 2 meals per day :) Ingredients You shall prepare for 2 teaspoons of canola oil, 1 cup of finely chopped onion, 1 garlic clove (minced), 1 carrot (peeled and sliced), 1 celery stalk (sliced), 10 oz of your preferred mushroom (sliced), 1/2 teaspoon of dried thyme, 1 teaspoon of dried oregano, 1/2 cup of quick cooking barley, 1 quart of 0 fat, low sodium chicken stock and 2 tablespoons of dried sherry. The Making Prepare a soup pot, heat oil and saute onions, carrot, celery, garlic and mushroom until soft. Add in dried herbs, stock, barley and sherry. Cover the lid and bring to boil. Reduce heat and simmer for 20 minutes until barley are soft. Serve hot.
