I really enjoyed this healthy meal. Try this Minestrone Soup-Recipe. Very good meal for vegetarians or if your on a diet! This is a wonderful minestrone soup that 's filled with tons of vegetables. Feel free to add different vegetables or ingredients. Serve with grated Parmesan cheese.Ingredients (6 servings)Well, for ingredients, you shall prepare for 1/3 cup of cannellini or any small white beans, 1/3 cup of whole dried peas, 9 cups of vegetables stock, 2 carrots (peeled and sliced thinly), 1 celery stalk (chopped), 1 onions (peeled and sliced), 2 tomatoes (peeled and cut into four pieces), 1/2 cup of vegetables (preferable green leaf), 1/2 teaspoon of dried basil, 1/2 teaspoon of dried oregano, 1/2 cup of macaroni, 1/3 cup of grate Parmesan cheese and 1 small handful of fresh parsley for garnish. The Making Firstly, you shall clean the bean and peas & soak the bean and peas together in 3 cups of stock for overnight. The beans should be white and plump and the peas should be green and plump. Prepare a soup pot, add in peas, beans and their soaking stock, remaining stock, onions, celery and carrot. Bring to boil. Reduce heat to medium and simmer for about 1.5 hours until the beans and peas are tender. Add in tomatoes, vegetable, oregano and basil and cook for about 10 minutes. Add in macaroni and cook for another 15 minutes. Sprinkle with parsley and grated cheese before serve. This soup will be absolutely perfect if serve with crusty bread. Enjoy! :)
