Here is the Minestrone SoupRecipe to teach you how to cook the flavorous Minestrone Soup. My family loved it, even my skeptical father who doesn't usually like my vegetarian dishes. Its a very hearty and warming soup. Ingredients for this Minestrone Soup Recipe (8 servings)Well, you shall prepare for 250g / 9 ounces of borlotti beans (soaked for overnight, drained), 250g / 9 ounces soup pasta, 100ml olive oil, 1.4 kg assorted vegetables (courgettes, French beans, broccoli, potatoes, peas, carrot, onions, leeks, etc - cut in bite size pieces), 3 garlic cloves (peeled and thinly sliced), 3 celery stalk (chopped), salt and pepper to taste. The Making Firstly, place the soaked beans in a saucepan and covered with enough water and bring to boil for about 10 minutes. Drain and pour in with enough fresh water again. Bring back to simmer over medium heat for about 1.5 hours. Meanwhile, in another separate saucepan, cook the soup pasta in plenty of rapidly boiling salted water until 50% cooked. Drain and reserve. Add in 1 tablespoon of olive oil and turn to coat. Prepare a saucepan, heat remaining olive oil and saute onions, garlic, celery and carrots for about 5 minutes. Stirring constantly. Add in the remaining vegetables except broccoli and French beans. Cover with enough cols water and bring to boil over high heat. Reduce heat and simmer until all vegetables are tender. Add in drained boriotti beans & salt and pepper to taste. Cook for 5 minutes. Add in 50% cooked pasta, French beans and broccoli florets. Simmer for about 5 minutes. Serve warm.
