Mexican Chicken Tortilla Soup A must try Mexican Soups.

Ingredients Well, for ingredients, you shall prepare for 3.5 cups of chicken broth, 2 small chicken breast, 1/2 cup of onion (peeled and chopped), 1/2 teaspoon of ground cumin, 1 clove garlic (minced), 1 tablespoon of cooking oil, 1 can of tomatoes cut up, 1 can of tomato sauce, 1 can of whole green chili pepper (rinsed and seeded, cut into bite size strips), 1/4 cup of chopped parsley, 1 tablespoon of snipped fresh oregano, 6 corn tortillas, 1 cup of shredded cheese. The Making Prepare a saucepan, place in chicken breast and pour in chicken broth. Bring to boil. Reduce heat and simmer for about 15 minutes. Remove chicken from pan and shred the chicken (discard bone and skin). Set aside. Strain broth through a large sieve or colander lined with 2 layers of 100% cotton cheesecloth. Skim fat from broth and set broth aside. Heat 1 tablespoon of oil in a saucepan, saute onions, garlic and cumin for few minutes. Stir in strained broth, undrained tomatoes, tomato sauce, chili pepper, parsley, oregano. Bring to boil. Reduce heat and simmer for about 20 minutes. Add in shredded chicken. Heat through gently. Meanwhile, strip tortilla. Fry strips in hot oil for about 1 minute. Serve the soup with tortilla chips and cheddar cheese. Yummy!
Shrimp Mexican Soups This soup is great for those spicy lover. This soup is very easy to make. I love this soup very much.

Ingredients (6 servings)Well, you shall prepare for 1 lb of dry shrimp, 3 tomatoes (chopped coarsely), 1/2 onion (peeled and chopped), 3 garlic cloves, olive oil for frying,2 carrots (peeled and diced), 1 potato, (peeled and diced), 2 chipotle chiles (to taste), water, salt to taste. The Making Wash & clean the shrimp. Remove the head of shrimp. Remove the shells completely and grind to a powder using a molcajete, mortar and pestle, or other tool. Sift or remove any remaining large pieces of shell. Prepare a soup pot, heat olive oil, lightly fry tomato, onion, chiles, garlic, carrot and potatoes. Add in shrimp, powder shells and enough water to cover all ingredients. Bring to simmer and season with salt to taste. Serve hot.

Ingredients Well, you shall prepare for 200g sugar snap bean (cut into bite size pieces), 3 cloves garlic (minced), 2 small zucchini (cubed), 120g tomatillos (chopped), 1 jalapeno pepper (finely chopped), 400g canned chopped tomatoes, 25g green chili, 1 onion (peeled and chopped), 1 medium green pepper (chopped), 1/2 teaspoon of cumin, 1 teaspoon of fresh oregano, 1500 ml vegetable stock, 2 roasted peppers, pureed with 1 tablespoon of chipotle peppers in adobo sauce (a sauce with tomatoes, garlic, vinegar, salt, and spices), 3/4 teaspoon of salt, 2 tablespoon of fresh lime juice, 25g fresh chopped coriander. The Making prepare a soup pot, place in sugar snap beans, courgettes, garlic, tomatillos, jalapeno, chopped tomatoes, green chili, onion, green pepper, cumin, oregano and vegetables. Puree roasted peppers with chipotle in adobo sauce in a blender, then add into soup. Cover and bring to a boil over high heat. Reduce heat to low, simmer for about 10 minutes. Season with salt to taste, lime juice and coriander. Serve hot.
