Mexican Chicken Tortilla Soup

This is Mexican typical soup with the flavor of lime, coriander, chili, etc. I always make my own tortilla chips. What i did is heat oven to 200C/fan 180C/gas 6. Cut 6 corn tortilla wraps into thin slices. Place on a baking tray and spray or brush lightly with a little olive oil. Season, then bake for about 4 minutes until golden.

Ingredients

To prepare 2 tablespoons of olive oil, 1 onion (peeled and chopped), 4 garlic cloves (crushed), 1 ancho or other large dried chilli (deseeded and softened in boiling water for about 10 minutes), 1/2 teaspoon of ground cumin, 400g can of plum tomatoes, 1.5 cup of chicken stock, 2 chicken breast (sliced), juice from 2 limes.

For serving (optional) :

Tortilla chips, avocado, lime wedges, red onion, coriander, etc.

The Making

Firstly, you shall heat oil in a saucepan, saute onion and garlic for about 5 minutes. Add in dried chili, cumin, tomatoes and chicken stock. Transfer into a food processor, puree until smooth.

Return to pan and bring to boil. Add in chicken meat. Reduce heat and simmer for about 10 minutes. Stir in lime juice and seasoning to taste. Serve with optional items - tortilla chips, avocado, lime wedges, red onion and coriander. Done :)


Best Mexican Cabbage Soup

This is the Best Mexican Soup that i ever tried. Cook it by today, you will understand what i said. Awesome!!!

Ingredients

Well, you shall prepare for 1 yellow onion (peeled and quartered), 4 garlic cloves (peeled and chopped), 1/2 jalapeno (minced), 5 carrots (peeled and sliced), 6 cups of cabbage (chopped), 1 large zucchini (cut into chunks), 2 handful of baby spinach, 2 teaspoon of olive oil, 1/3 cup of chopped cilantro, juice from 1 lime, 6 cups of chicken broth, 1 can of diced tomatoes (15 ounces), 1/2 cup of frozen peas, salt and pepper to taste.

Optional item : Pre-cooked chicken (shredded), avocado.

The Making

Heat olive oil in a pot over medium heat, saute onion for about 5 minutes until soft. Season with salt. Add in carrot, jalapeno, garlic and cook for another 3 minutes. Combine all the vegetables before adding the broth and the tomatoes, adjust the heat to high and bring to a boil. Reduce heat to low and add in zucchini and peas. Cook for 3 minutes. Stir in spinach, cilantro and lime juice. Add seasoning to taste. Serve hot.

You can topping the soup with shredded & cooked chicken and avocado.


Posole Soup Recipe

Easy & Tasty Mexican Soup Recipe. You can garnish this soup with onion, cabbage or lime juice, etc...all to your preferences! :)

Ingredients

2 tbsp of chili powder, 2 tsp of salt, 1 small size of cabbage (chopped), 4 cups of hominy, 1 lime (cut into wedges), 1/2 cup shredded cabbage for garnish, enough water to cover all ingredients, 1 tbsp of onion and 2 lb of pork loin.

The Making

Prepare a pot, place in pork, water and salt. Bring to boil. Reduce heat and simmer for about 2 hours. Remove the bones and fat off the meat. Cut the meat from bones and return to pot. Add in chili powder and hominy. Bring to boil again for about half an hour. Garnish with onion, radishes, cabbage and lime juice before serve. Yummy Yummy!!


Mexican Soup With Aged Cheddar From Here

This Mexican Soup will have a lot of ingredients involved. Prepare it when you free. You wont regret to choose & cook this soup recipe, because this soup is really fantastic!!!

Ingredients

(6 servings)

1 small jalapeño pepper (quartered and de-seeded) (optional)1 teaspoon of chilli powder1 teaspoon of ground cumin1 teaspoon of ground coriander seeds1 teaspoon of cocoa powder2 tablespoon of olive oilSalt and freshly ground pepper3 cups of chicken stock2 cups of canned black beans1/4 cup of fresh cilantro, chopped1 cup of Aged Cheddar From here, grated1 cup of fresh cream 8 large Italian tomatoes (halved lengthwise)1 large onion (peeled and chopped)2 carrots (peeled and chopped)3 garlic cloves (coarsely chopped)1 red pepper (chopped)1 yellow pepper (chopped)

The Making

Preheat an oven to 350°F (180°C). Prepare a roasting dish, add in 6 tomatoes, onion, garlic, carrot, jalapeno and pepper. Add chili powder, cumin, ground coriander seeds, cocoa powder. Coat all the vegetables with oil oil. Add salt and pepper. Bake for about 50 minutes. Stir frequently.

Remove vegetables from the oven and transfer to a blender. Add the poultry stock and deglaze the pan. Add this stock along with half of the black beans to the blender and blend everything to a smooth consistency.

Transfer the soup into a saucepan and add the remainder of the beans. Bring to a boil and stir constantly. Reduce heat and cook for another 5 minutes. Garnish with remaining chopped tomatoes, fresh cilantro, Aged Cheddar From Here, tortilla chips and fresh cream before serve.
