Low Carb French Onion Soup Ingredients (1 serving size, 7.5 g carb per serving) 1.5 cup of onion, sliced, 2 tablespoon of butter, 1 tablespoon of Wondra flour, 3 1/2 cups of Low carb chicken stock, seasoning : black pepper & salt to taste, 3 superb rolls, 1 ounce butter and 4 ounces of Grated Swiss cheese. The Making After this soup has finished simmering, preheat oven to 375ºF. Have ready a lightly buttered, ovenproof earthenware soup bowl or deep casserole dish. 1). Prepare a saucepan, heat butter over medium heat. Add in onion and cook until soft. Add in flour; stir well. Add in stock and keep stirring. Bring to simmer for about half an hour. Add in seasoning. Pour the soup into a ovenproof bowls. Slice the rolls thinly, discard the end. Toast the slices in a toaster oven. Be careful, don't let it burn. Butter the slices and put them on the top of soup. Sprinkle cheese on top.Place the bowl in the oven for 15 min. Serve. Fantastic!
Low Carb Cream of Mushroom Soup
Ingredients (6 servings, 4.5 g carbs per serving) 2 cups of chicken stock, 2 tablespoons of Butter, 1 tablespoon of olive oil, 16 oz fresh mushroom (sliced thinly), 1 tablespoon of fresh lemon juice, 1 Clove garlic (minced), 1/2 cup of cream, seasoning : salt and black pepper to taste.
The Making 1). Preheat the oven to 300 degrees. Spread mushroom onto a shallow oven-proof baking dish in a double layers. Add in butter, oil, garlic, lemon juice and seasoning. Bake for 1 hour. Set aside a few mushroom, heat the soup for 5 min, add in cream, cook stirring for another 5 min. Don't boil. Garnish with remaining mushroom before serve.
