Tuna Low Carb Soup Recipe

Ingredients

(4 carbs per serving)

Low salt vegetable stock, 200g Canned Tuna (drained), 200g canned tomatoes, 2 carrot, peeled and chopped, 2 chopped Stalks Celery, 3/4 cup of Green beans, 1/2 cup of Peas, 1/2 cup of corn, 1 cup of Broccoli, 2 cloves garlic, 2 tablespoon of mixed herbs. For seasoning : Pepper (to taste)

The Making

1). Clean, cut all veggies. Prepare a soup pot, add in stock and tomatoes, boil it. Add in all veggies and pepper, reduce heat and simmer for about 20 minutes. Add in tuna (drained), simmer for another additional 10 minutes. Serve.



Low Carb Soup Recipe for Crab

Ingredients

(5 carbs per serving)

4 pound of Snow crab clusters (legs), 4 quarts of Water (about 16 cups), 1 peeled and chopped small onion, 1 1/2 chopped stalk celery, 2 Clove garlic (quartered), 1 small turnips (peeled and chopped), 1/4 cup of fresh Italian parsley (chopped),2 teaspoon of Mustard seed, i tablespoon of Pimento (chopped), 1/2 tsp of coarse ground pepper, 2 bay leaves, 1/3 cup of Sugar free tomato sauce, 2 tablespoon of half & half, 1/4 cup of unsalted butter, 1/2 tsp of thyme,  1/8 tsp of basil, 8 tsp of Marjoram.

The Making

1). Take out all crab meat from shells and put aside.

2). Prepare a soup pot, put in half of the shells & 4 quarts of water, heat over high heat. Add in onion, 1 stalk of celery, garlic, bring to boil for about 1 hour; stirring occasionally. The white part of the shells will turn into transparent. Then, strain stock. Discard shells, onion, celery, garlic. Remain keeping the stock only.

3). Put 3 quarts of stock into a large saucepan, add turnips, boil it.Add the remaining half crab and ingredients to the saucepan, bring it to boil. Reduce heat and simmer for 4 hours until it reduce to half and being thicken, uncovered. Add the remaining crab and simmer for another 1 hour until the soup is very thick.
