Lentil Soup

This is a fabulous base Lentil-Soup Recipe. You can add or delete ingredients to your own tastes and it comes out great. Ingredients (6 servings)Well, you shall prepare for 1 onion (peeled and chopped), 1/4 cup of olive oil, 2 carrots (peeled and diced), 2 celery stalk (chopped), 2 cloves garlic (peeled and minced), 1 tsp of dried oregano, 1 bay leaf, 1 tsp of dried basil, 1 can of crushed tomatoes (14.5 oz), 2 cups of dry lentil, 8 cups of water, 1/2 cup of spinach (rinsed and sliced thinly), 2 tbsp of vinegar, salt and black pepper to taste. The Making Firstly, prepare a soup pot, heat oil over medium heat. Saute onions, celery and carrot for about 5 minutes until onion soft. Add in garlic, oregano, basil and bay leaf, cook for about 2 minutes. Add in lentils, water and tomatoes. Bring to boil, reduce heat and simmer for about 1 hour. Add in spinach and cook until wilted. Stir in vinegar and season with salt and pepper. Serve hot.
