Here are some Easy Making, Delicious Leek-Soup Collection. I love to make these soup during my spare time. They are all different in style. Let's grab your preferred soup and share with your beloved families by today. I believe they will love these soup too.

Do you know that Leeks is a good source of dietary fiber. It also contain goodly amounts of folic acid, calcium, potassium, and vitamin C. Easier to digest than standard onions, leeks have laxative, antiseptic, diuretic, and anti-arthritic properties.


Leek Soup

Ingredients

6 leeks (white parts only, sliced thinly), 1 white onions (peeled and sliced), 1/4 cup of butter or margarine, 6 potatoes (peeled and sliced), 6 cup of chicken bouillon, 1/2 cup of chopped parsley, 1 egg yolk (beaten), 2 cup of light cream, crumbled crisp bacon, 1 dash of nutmeg, 1 dash of nutmeg, salt and pepper to taste.

The Making

Heat saucepan, melt butter, saute leeks and onions until soft. Add potatoes, bouillon and parsley. Bring to simmer until all veggies are tender. Strain and sieve vegetables, leaving them a puree consistency, and return to broth.

Add some broth into the beaten egg and stir well. Add egg to broth with seasoning. Add cream and heat through over low heat. Garnish with crumbled bacon.

Potato & Leek Soup

Ingredients

To prepare 1 tsp of olive oil, 1 onion (peeled and chopped), 500g potatoes (peeled and diced), 500g trimmed leek (sliced), 500ml milk, 500ml water, 150ml cream, 1 teaspoon of nutmeg, 1 teaspoon of salt & pepper each, chopped parsley for garnish (optional).

The Making

Heat olive oil in a pan, saute onion for 5 minutes until soft. Add potatoes and leeks, stir well and cook for 10 minutes.

Add in water and milk, bring to boil for 5 minutes. Reduce heat and simmer until veggies are tender.

Transfer to a blender and puree until smooth. Return to pot and stir in cream and seasoning. Reheat over low heat and garnish with parsley before serve.


Oatmeal Leek Soup

A Nutritious Breakfast.

Ingredients

1 small leek (washed well and trimmed), 3 cups of whole meal, 1/4 tsp of freshly ground black pepper, 1/2 tsp of salt, 1 cup of quick cooking oats.

The Making

Prepare a saucepan, place in leeks, milk, pepper and salt. Bring to simmer for about 2 minutes and add in oats. Serve immediately.


Cream of Leek Soup

Raw soup...

Ingredients

To prepare 1/2 avocado, 1 cup of zucchini (chopped), 1 stalk of celery (chopped), 1 tbsp of lemon juice, 1 tsp of mellow white miso, 1 piece of leek (cleaned and most of the top being removed), 1/4 tsp of sea salt, 1 dash of cayenne pepper, 1 tbsp of olive oil, handful of fresh parsley, 1 cup of water and sour cream.

The Making

Blend in all the above mentioned ingredients into a blender, puree until smooth. Garnish with sour cream before serve. You can also refrigerate it for few hours before serve (optional) :)


Ham Potato Leek Soup

Ingredients

To prepare 1 pound of potatoes (peeled and cubed), 1 pound of leeks (washed well and sliced thinly), 6 cup of water, 1 teaspoon of instant bouillon granules, 1 bay leaf, 12 ounces cooked ham (cut into 3/4 inch chunks), pepper to taste.

The Making

Prepare a large pot, place in potatoes, leeks, water, bouillon granules, bay leaf and pepper. Bring to boil. Reduce heat and simmer for 20 minutes.

Add in ham and simmer for another 20 minutes. Discard bay leaf. Serve hot. You may thicken the soup by mash the potatoes against the sides of pan.




Curry Leek Soup

A delicious warm soup. I used regular milk instead of evaporated milk and it was great!

Ingredients

3 medium leeks (white portion only - sliced thinly), 1 garlic clove (peeled and minced), 1 tbsp of butter or margarine, 1 can of chicken broth (14.5 oz), 3/4 cup of water, 1.5 cup of thinly sliced carrots, 2 celery ribs (sliced thinly), 2 tsp of chicken bouillon granules, 1 tsp of curry powder, 1/8 tsp of pepper, 1 can of fat free evaporated milk.

The Making

Heat a saucepan, melt butter, saute leeks and garlic until soft. Add broth, water, carrots, celery, bouillons, curry powder and pepper. Bring to boil. Reduce heat and simmer for 20 minutes. Transfer soup to a blender. Puree until smooth. Return to pan and reheat over low heat. Stir in milk. Serve.


Cream of Potato & Leek Soup

Ingredients

6 potatoes (peeled and cubed), 1 can of chicken broth, 2 leeks (chopped), 2 teaspoons of margarine, 1.5 cups of heavy whipping cream.

The Making

Prepare a pot, add in potatoes and broth and bring to simmer for 20 minutes.

Heat another skillet over medium heat, melt butter, saute leeks for 10 minutes until soft. Add the leeks and cream to potatoes and stir well. You can thicken the soup by mash the potatoes against the sides of pan.


Leek & Lentil Soup

Highly rated soup. Awesome !

Ingredients

2.5 liter of water, 500g lentils, 3 pork hocks (fresh or smoked), 500g slab bacon or salt pork (diced), 500g Kielbasa (polish sausage) (diced), 500g potatoes (diced), 250g celery roots (celeriac) (peeled and diced), 250g celery stalk (cleaned and diced), 500g leek including green parts(cleaned and diced), 250g carrots (cleaned and diced), 1/2 teaspoon of sugar, 1.5 teaspoon of dry savory, salt, pepper and red wine vinegar to taste.

The Making

Prepare a big soup pot, bring water with lentils, savory & pigs knuckles to boil for 3 minutes. Remove from heat and set aside for 1 hours with covered.

Prepare a large pan, saute slab bacon & kielbasa over medium low heat. To degrease (do not brown), drained and discard rendered fat.

After one hour, remove pork hocks from the pot, cut meat from bones, discard bones, dice meat.

Combine all meats and vegetables to pot and bring to boil for few minutes. Stir occasionally. Add few dashes of vinegar. Reduce heat and simmer for about 1 hour. Stirring always.

Season with salt, pepper and vinegar to taste. Simmer for another 3 minutes. Serve hot.
