Low Fat Leek and Potato Soup

This Low Fat Leek & Potato Soup is majority using the low fat ingredients as per follows. This soup is very simple making and very tasty. You shall try.Ingredients (4 servings)Well, for ingredients, you shall prepare for 2 teaspoons of canalo oil, 2 medium shallots, 3 medium leeks (using light green and white part only) (washed well and sliced), 1 lb of Yukon Gold potatoes (peeled and chopped), 1 cup of 0% fat, low sodium chicken broth, 1 2/3 cups of 0% fat milk and ground black pepper. The Making Prepare a saucepan, heat oil and saute potatoes, shallot and leeks for about 5 minutes until soft. Stirring. Pour in chicken broth and milk, bring to simmer for half an hour over medium heat. Transfer the soup into blender, puree until smooth. Return to pan and season with black pepper. Garnish with chopped parsley before serve. (optional) Nutrition per serving: 170 calories, 23 calories from fat, 2.7g (sat 0.3 g) total fat, 1 mg cholesterol, 211mg sodium, 29.9g carbohydrate, 3.6g fiber and 6.7g protein.
