I wish to share with you some Easy Making & Elegant Japanese Soups Recipes which these recipes were given by one of my Japanese cute friends, Ashley. She love to cook Japanese Cuisine and she can cook very well. Thanks! Ashley, i love your cooking :)


Japanese Miso Soup

Miso Soup is one of the common Japanese-Soup and this soup is really easy to make and you only need a few ingredients to make a this light soup which you can enjoy yourself or with your family and friends.

Ingredients for this Japanese Soup

For ingredients, you need to prepare for 1 block tofu (cut into 1 inch cubes), 1 scallion (green onion) (chopped), 3 cups of dashi soup stock, 3 tablespoons of miso paste, 1/2 tablespoons of sesame oil (optional item)

The Making

Firstly, prepare a saucepan, pour in the dashi and bring to boil. Once boiling, add in tofu cubes, reduce heat and simmer for 5 minutes. Take out some of the dashi from the saucepan and put in a small bowl, add in miso paste into the same bowl and stir well until the paste dissolve completely. Return the miso paste & dashi mixture into the saucepan. Turn off the heat and add in scallion & sesame oil (optional). Serve hot.

The important tips for cooking this soup is, never boil the soup after add in miso soup. That is because boiling it will causing it's healthy properties in soup will be ruin and it will change the flavor of soup.


Japanese Tofu Soup

Ingredients for this Japanese Soup

(Servings : 6)

Well, for ingredients, you need to prepare for 1 package of oriental egg noodles (8 ounces), 2 tablespoons of olive oil, 5 scallions including tops (sliced diagonally), 1 teaspoon of fresh ginger (minced), 5 cups of chicken stock, 1 small cabbage head (thinly sliced), 1/4 cup of broccoli (optional), 1/4 cabbage (optional), Firm tofu (12 ounces - diced into half inch cubes), 1/2 teaspoon of salt and 1/4 teaspoon of black pepper.

The Making

Cook the noodles according to package directions. Drain and toss with 1 tablespoon of olive oil. Set aside.

Prepare a wok, heat 1 tablespoon of olive oil for about 30 seconds over medium heat. Add scallions & ginger and stir fry for about 2 minutes until crisp tender.

Add in stock and bring to boil. Add in cabbage, broccoli and carrot, reduce heat, simmer for about 5 minutes until tender. Stir in cooked noodles, tofu, salt and pepper. Serve hot.


Japanese Chicken Soba Soup

Soba, or buckwheat, noodle soup is widely enjoyed throughout Japan. Check out.

Ingredients for this Japanese Soup

(4 servings)

For ingredients, you need to prepare for 1/2 pound of boneless chicken breast (sliced in 2 inches pieces), 1/2 cup of soy sauce, 1 tablespoon of dry sake, 4 cup of chicken broth, 1 cup of leek (cut into 1 inch pieces), 6 ounces of fresh spinach leaves, 12 ounces shitake mushrooms (stems removed), caps thinly sliced, 11 ounces of buckwheat noodles. For garnish : chopped scallions.

The Making

Whisk soy sauce and dry sake in a saucepan, bring to simmer. Add in chicken and cook for 3 minutes over medium heat.

In another separate saucepan, bring stock to boil. Add leek and reduce heat. Simmer for 3 minutes, after that, add spinach & sliced mushrooms. Remove saucepan from heat and cover to keep hot.

Bring 4 quarts of salted water to a boil in a large saucepan. Scatter noodles into boiling water and cook for about 5 minutes until noodles are tender. Strain the noodles into a colander, rinse under running cold water. Drain well.

Put the noodles into serving bowl, ladle the soup into the bowl, then add a portion of the chicken / soy / sake mixture. Garnish with scallions before serve.

How to make Homemade Japanese Chicken Stock?

Well, for ingredients, you need to prepare for 3 1/2 pounds of chicken bones, 12 cups of water, 2 slices of fresh ginger, 2 celery stalk, 4 scallions, 10 peppercorns (crushed)

You shall place the chicken bones into a large soup pot and bring to boil. Skim off fat which raise at the top of the stock, if there is any. Add in ginger, scallions, celery and peppercorn. Reduce heat and simmer for about 2 1/2 hours. Remove from heat and let it cool. Uncovered and undisturbed.

Strain stock through a stainer lined with cheesecloth into a clean bowl. Done.
