Italian Wedding Soup Recipe

This Hearty Italian-Wedding Soup Recipe was inspired by a soup I tasted at an Italian wedding. It is sure to please just about everyone! Ingredients For Soup :You shall prepare for 1 whole chicken, 6 large onions (peeled and chopped), 6 medium size carrots (peeled and chopped), 6 ribs of celery (chopped coarsely), 3 celery top (chopped), 2 large head escarole (chopped), 1 tablespoon of basil, 2 tablespoons of parsley flakes, salt and pepper to taste. For Meatball :You shall prepare for 1 cup of bread crumbs moistened with water, 1 pound of chunks or ground round, 1 tablespoon of parsley flakes, 1/2 cup of grated Romano Cheese, 1 egg (beaten). Seasoning : salt, pepper and garlic powder to taste. The Making For the preparation of soup, you shall prepare a large pot, pour in enough boiling water, place in chicken and boil for half an hour. Remove chicken from pot, let it cool for awhile. Remove bone and cut to bite size piece. Set aside. Skim off the fat from the top of the soup, add in celery, onions, carrots and seasoning. Bring to simmer over medium heat for about 30 minutes. For the preparation of soup, you shall prepare a bowl, mix in all the above mentioned ingredients for meatball. Stir & mix well and rolled into a tiny meatball which is about marble size meatball. Add the meatball & chicken pieces into the simmering soup. Meanwhile, in another separate pot, boil escarole for 15 minutes until wilt down. Remove from pot and add into simmering soup. Let the soup simmer over low heat for long time to allow flavors to mingle. Done Let's try out this great Italian Wedding Soup Recipe by today! :D
